Old-fashioned Homemade Lemonade
Serves 8

This simple drink is easy to make, refreshing and full of vitamin C. It is not as sweet and heavy as most shop-bought lemonades and is free from artificial colours and flavours. You may need a few extra lemon to make up the amount as they very in size.

10 large lemons
4oz / 115g caster sugar
1 lime
Sprigs of mint for decoration

Pare the rind from 9 of the lemons using a vegetable peeler. Take care to avoid the white pith. Squeeze out and strain the juice to make up 3/4 pint / 450ml.
Put the lemon rind into a large, heatproof bowl, add the sugar and pour in 21/2 pints / 1.4 litres of boiling water. Stir until the sugar dissolves, then cover and leave to stand for 30 minutes.
Strain the lemon liquid into a large jug and stir in lemon juice. Cover and refrigerate for about 2 hours, until it is really well chilled.
Place a big block of ice or ice cubes into a large serving jug. Cut the remaining lemon and the lime into slices and add to the jug. Pour the lemonade into the jug and decorate with mint leaves.
This lemonade will keep in the refrigerator for a week, but avoid adding any ice before storing as this will dilute the flavour.

I think homemade is always better, but I do admit to drinking Minutemaid. However, if you go for homemade then to get the best flavor look for recipes that include using the lemon rind. Extracting the oils from the peel gives the best lemon flavor. Here is a recipe from Marcia Adam's Cooking from Quilt Country cookbook that I have found people seem to like:
4 large lemons
3/4 cup to sugar
1 quart water

Wash the lemons and cut into thin slices; remove seeds. Place the lemon slices into a pitcher. Cover the fruit with sugar and mix. Let stand for 10 minutes.
Press lemons firmly with a potato masher to extract the juice and oil from the rinds. Add the water and continue to mash the fruit until the liquid is well flavored.

If you find that mashing the lemons to extract both the oils and the juice is too much work then here is another idea that I have used: Cut the lemons in half and squeeze out the juice using a juicer or reamer. Put the juice in a pitcher. Then cut the peels into several large pieces and place them in the container with the juice. Add the sugar, let stand 10 minutes and then mash the rinds with a potato masher. Add the water.

Chill the lemonade or serve over ice (or do both.)

Lemon Juice, freshly squeezed from 8 large lemons (1-1/2 cups)
1/2 cup of sugar, granulated - more or less to taste
5 cups cold well water
1 large lemon, cut into small wedges or thin cartwheel slices
Ice cubes.

In a large pitcher, combine the freshly squeezed lemon juice, granulated sugar and 2 cups of cold water; stir briskly to dissolve the sugar. Add the remaining ingredients and stir briskly again.

To make a Honey Flavored Lemonade:
Substitute your favorite "honey" for the granulated sugar. Adjust more or less to taste.

To make a Pink Lemonade:
Add a few drops of grenadine syrup

INGREDIENTS
1 3/4 cups white sugar
8 cups water
1 1/2 cups lemon juice
DIRECTIONS
In a small saucepan, combine sugar and 1 cup water. Bring to boil and stir to dissolve sugar. Allow to cool to room temperature, then cover and refrigerate until chilled.
Remove seeds from lemon juice, but leave pulp. In pitcher, stir together chilled syrup, lemon juice and remaining 7 cups water.

My choice would be Strawberry Light Lemonade

You can adjust the Splenda and sugar (add more or less) depending on your
taste preference.

Ingredients:
2 cups sliced or halved strawberries
5 tablespoons superfine sugar (regular sugar will work too though)
8 tablespoons Splenda
12 tablespoons freshly squeezed lemon juice
ice cubes as desired
about 2/3 cup club soda, mineral water or seltzer water per glass

Preparation:
1. Puree strawberries and 1 tablespoon sugar in blender or small food
processor.
2. Spoon 3 tablespoons of strawberry puree into each glass then add in 2
tablespoons of Splenda and 1 tablespoon of sugar into each glass.
3. Add 3 tablespoons of lemon juice in each glass then stir to blend well.
Stir in about 2/3 cup of club soda (or similar) into each glass, add some
ice and serve!

Yield: 4 glasses
