it depends on what kind of cheese it is. they have different makeups so they mold at different rates. the most effective way to prevent it is to put your cheese in a plactic bag. it will stay good for about a month.

I think it takes a little while before it'll mold. It doesn't mold in a week or two but proably a month after you buy it would.
