Blood leaks out. Your body begins to go into shock. Heart speeds up, breathing gets faster, pupils dilate. Your body begins to release all it's excess dopamine (to keep up your blood pressure) and epinephrine (to keep your heart-rate steady). The dopamine dilates your pupils and keeps your BP steady, the epinephrine speeds up your heart and increases your breathing.

In addition to all that, your body also releases natural pain-killers. It's these pain-killers (called endorphins) that people who self-harm get addicted too. It makes them feel good when they cut, so they keep doing it.
