I will answer you straight out . . . if she is of legal age . . . then yes, you can date . . . and eventually marry her.
But . . . You knew there was going to be one . . . but actually there is more than one thing.
1) Stereotypes - Her parents, other people your age . . . will look down at you . . . calling you a cradlerobber, and other names that may get me suspended from yahoo, so I won't place them here.
2) Maturity - You, yourself said, that you were kinda immature . . . imagine her . . . she just turned 18 . . . she is just starting to mature. In 10 years, she will be different than the girl you started going out with. Just warning you . . . it could be a problem, especially if she starts thinking what if . . . and believe me in about 10 years . . . you do start thinking about the what ifs and what you believe you could have done to make your life better.
3) To attract an 18 yr old, you must have a decent education and a good position . . . it is not just good looks . . . some girls are after bling bling, and if you have it, they want it. So, don't get too attached, and if you do . . . get a prenupt and always use protection.
4) Education . . . She is 18 years old . . . does she have plans on going to college, will you let her go to college. If she does have plans and her dreams are to go to college, let her. But don't pay for her college. Take her out, have a good time . . . but don't pay for her education, that is her parent's job and her's alone. She may try to string you along to get her a good place to stay and to pay for her education. You think I am kidding, girls are taught that early . . . girls are attracted to 3 things . . . Money, Wealth, Fame . . . not all girls, but the majority are.

If I was you, I would wait until she is in college first. I was 31 when I met my current girlfriend who was only 19 at the time. We where friends first and did not start to date until almost a year later. We have been together now for 4 years. Her parents and extended family has not had any problems with either my age or the fact that I was married before. I would at least wait until she is graduated from High School before doing anything than having a talk with the dad after you talked with her to make sure that she wants to date an older guy. That is one of the biggest hangups with my girlfriend is our age difference.

My sister had the same problem. She finally decided to talk with her boyfriends mother. It was awkward but well worth it. I would say at least try to find out why she feels that way.
