Two potato dishes that I make frequently are Champ - mashed potatoes with scallions and Colcannon - a cabbage and potato dish. I've been to Ireland several times and I can never get enough salmon - it's so much better than the salmon in the US.

A dish that was frequently on the menus in Ireland was an Irish boiled dinner - very much like a New England boiled dinner - and just as boring. But, I saw a lot of people ordering it.

I got a job in an I-talian restaurant when I was 16, I'm now a pretty good cook, my wife says that I'm more EYE-talian (joke) than she is (she's 1/2 Irish. 1/2 Italian, send help)

Meat and potatoes. I have been to Ireland to visit many falimy members, and everytime I am there, it is steak with either mashed or baked potatoes!

(Also, my Aunt eats a lot of salmon and she is from Co. Galway.)

My vote is for potatoes because, although my fmaily loves corned beef, potatoes accompany almost every meal.

Pressed ham and cheese sandwiches! Every pub in ireland, it seemed, sold them hand over fist. They were good too!
