One-Pan Chicken and Potato Bake
It only takes 4 ingredients to make this flavourful dish. Just toss them all together and pop in the oven.

Serves: 4
4 bone-in chicken pieces (1-1/2 lb.)
4 large potatoes, cut into wedges
1/4 cup KRAFT Zesty Italian Dressing
1/4 cup KRAFT 100% Parmesan Grated Cheese
PREHEAT oven to 400°F. Place chicken and potatoes in 13x9-inch baking dish.
POUR dressing over chicken and potatoes; sprinkle with cheese.
BAKE 1 hour or until chicken is cooked through (180°F).
Serving Suggestion
Serve with a tossed green salad and your favourite Kraft Dressing.

This is a recipe that me and my college roommate made a lot when we were at school!
Monterrey Chicken Fajitas
2 tsp. vegetable oil
1 lb. chicken breast, cut into strips
1 medium green pepper, cut into strips
1 medium onion, sliced
1 can cream of mushroom
1/2 cup salsa
8 flour tortillas, warmed
1 cup shredded monterrey jack cheese
Heat oil in skillet. Add chicken and cook until browned, strirring often. Add pepper and onion and cook until tender crisp. Add soup and salsa and heat through. Spoon into tortillas and top with cheese. Roll up and eat.
(It sounds kind of weird with the cream of mushroom, but it's really good - I promise!)
We used to subscribe to a magazine called "Simple and Delicious" that had a lot easy recipes with lots of pictures and not a lot of expensive fancy ingredients. Then we'd take turns picking out new recipes and trying them out on each other. It was fun! Here's the website if you're interested.

Crunchy Parmesan Chicken
1 chicken (3-1/2 to 4 lb.), cut into quarters
4 Tbs. unsalted butter
1/3 cup freshly grated Parmesan cheese
1/2 cup all-purpose flour
1-1/2 tsp. coarse salt
1 tsp. basil
1-1/4 tsp. sweet paprika
1/8 to 1/4 tsp. cayenne
Freshly ground black pepper
Heat the oven to 425°F. Rinse the chicken and pat it dry with paper towels. Cut away any excess fat and tuck the wings behind each breast.
Put the butter in a shallow baking pan (a 9x13-inch Pyrex pan or large oval baking dish works well). Put the pan into the oven while it's heating. When the butter is melted (about 10 min.), remove the pan and set it on a heatproof surface or on a couple of potholders.
In a shallow, medium bowl, combine the Parmesan, flour, salt, basil, paprika, cayenne, and lots of freshly ground pepper. Dredge a piece of chicken, skin side down, in the melted butter first and then in the cheese mixture. Use your hands, pressing gently, to coat evenly. Turn the chicken skin side up and push it to the side of the pan. Repeat with the remaining chicken pieces.
Bake, basting with the pan juices occasionally (tilt the pan and spoon the juices from the corners), until the chicken is well browned and cooked through, 50 to 60 min. serves 4
Collard Greens Cooked with Salt Pork
2 Tbs oil
1 chunk of salt pork, maybe 2" long
1 quart hot water
2 tsp salt
1 tsp sugar
1-3 pounds collard greens
Heat the oil and cook the salt pork for 10 minutes or so, until a bit crispy. The original recipe called for 1 cup of chopped ham so you could use that as well. Add the hot water and bring to a boil, then simmer 10 minutes to make a quick broth. Add the salt, sugar, and collard greens, bring back to a boil, then lower to a simmer, stirring now and then. Cook at a slow simmer for
about 45 minutes. Add the ham back in if you want.
Italian Sausage and Potatoes
1 pound sweet and/or hot Italian sausage, cut crosswise into thirds
1 pound small red potatoes, each cut in half
1 jumbo onion (about 1 pound), cut into 12 wedges
2 red and/or yellow peppers, cut lengthwise into 8 pieces
1 tablespoon olive oil
1. Preheat oven to 450° F.
2. In 15 1/2" by 10 1/2" jelly-roll pan, combine sausages, potatoes, onion, peppers , olive oil, 1/2 teaspoon salt, and 1/4 teaspoon black pepper; toss to coat.
3. Roast sausage mixture 30 to 35 minutes or until potatoes are fork-tender and sausages are lightly browned, stirring once halfway through roasting.

bangers & mash - buy a tray of sausages and bag them into 2's or how ever many you think you will eat for a meal - crush some garlic,ginger and soy sauce and honey and fry your sausages with the mix. Cook some mash potato and have some steam vegies like broccolli and carrot! quick healthy and YUMMMMMY :D hehee
2/ Cut your carot, potato, brocolli up into btie size bits - steam them to your taste - chuck in a bowl drizzle some mayo/olive oil pepper and salt mixed together and enjoy with a steak or piece of chicken?

QUICK AND EASY CHICKEN SPAGHETTI
INGREDIENTS
1 (12 ounce) package angel hair pasta
1 (10 ounce) can diced tomatoes with green chile peppers
1 (10.75 ounce) can condensed cream of chicken soup
3/4 (8 ounce) package processed cheese, cubed
2 cups chopped cooked chicken breast
1/2 (4 ounce) jar sliced mushrooms, drained
salt and pepper to taste
DIRECTIONS
Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes ; drain and return to pot.
To the pasta add the diced tomatoes with green chile peppers, cream of chicken soup, processed cheese, chopped chicken, mushrooms, salt and pepper. Cook and stir over low heat until cheese is melted. ENJOY!!!

Tuna noodle Casserole
1 box mac and cheese
1 can Tuna
1 can sweet peas
1 can cream of chicken soup
make the mack same as usual when you add the cheesy mix, butter and milk mix in the cream of chicken soup, tuna when that's all mixed fold in the peas. I like this its good.

Pasta, pasta, pasta! Just saute the veggies/proteins that you love the most and toss them with some cooked pasta....viola! The meal that keeps on giving hot or cold! (Ramen and Mac & cheese suck)
