Use a hoagie roll.
Mix tomato sauce to the finely shredded pot roast and heat it up.
Top with grated italian cheese mix and extra parmesan.
Yum, now I am hungry. Off to the fridge I go...

Here's something different and theres not too much you can do to mess it up. You can add whatever you want, but this works well.
Shred the meat, ditch any fat and put it in a mixing bowl.
Dice some onion.
Dice some red bell pepper.
Add some chopped celery leaves.
Mix up some mayo with some horseradish paste, enough to evenly coat the ingredients.
Salt and pepper.
Mix it all up and let it sit for a couple of hours then put it on your favorite bread with some sliced tomato.
I like sourdough myself.
You can grill it or serve it cold.
I've used chopped pepperocini instead of onion. Use your imagination.

Plain and simple===slice the beef thin, stack on bread ,add lettuce and mayo. Or make hot roast beef sandwiches with store bought Campbells Homestyle gravy, it`s about as close to homemade as u can get. Also, try roast beef hoagies, pile on any trimmings and condiments ur family likes. All r good.

Hmm...something unique? Well, I would try pot roast with some sweet glaze, just a little like cranberry glaze?, and some cheese between two slices of whatever bread you have on hand. Sometimes sweet and savory work well together. =) Or, if you don't have that on hand, maybe a slice of pineapple? I don't know.... I mean... you said unique. =/ oh! or make sloppy joes out of them... that'd be interesting.

spread on one side of a sandwich roll
spread the other side with dressings of your choice
easy way to feed the family
use 2 or 3 different types of dressing
good mayo or spicy mustard are easy and tasty
spread the bread
add your meat and cheese of your choice
wrap in foil
bake in a 375 degrees oven for 15 minutes
let them rest for a few minutes before serving
add lettuce, tomatoes, onions and pickles --- if you want

You can use the pot roast in place of the deli roast beef & serve on onion rolls or crusty rolls of choice.
Beef and Blue Sandwiches with Carmelized Onion
BLUE CHEESE SPREAD:
1 1/2 packages (8 oz.) cream cheese - softened
8 ounces sour cream
2 teaspoons worchestershire sauce
1 teaspoon hot sauce
6 ounces blue cheese - crumbled, can use Maytag, Stilton or Gorgonzola
1/2 cup walnut halves - toasted and chopped
CARMELIZED ONIONS:
3 tablespoons olive oil
3 large, sweet onions - thinly sliced
1 1/2 tablespoons balsamic vinegar
1/4 teaspoon fresh ground pepper - or to taste
36 cocktail sandwich buns
1 1/2 pounds deli sliced roast beef
makes approximatley 36 sandwiches
BLUE CHEESE SPREAD:
Beat cream cheese with an electric mixer until creamy. Add sour cream, worcestershire sauce and hot sauce.
Stir until blended. Stir in blue cheese and walnuts. Cover and chill for two hours. Left over spread is great on steak or add a splash of milk to transform it into a wonderful salad dressing.
CARMELIZED ONIONS:
Heat oil in a dutch oven over medium heat. Add onions. Cook, stirring often, 30 minutes or until carmelized. Stir in vinegar and pepper. Remove from heat, cool slightly.
Split rolls in half. Spread tops and bottoms of rolls with the blue cheese spread. Place roast beef on bottoms of rolls. Top beef with carmelized onions. Cover with tops.

Slather it in some BBQ sauce with some grilled onions, now that's a sandwich.
If you really want to get cute you could spice up mix it with some scrambled eggs, cook it up, serve with some tortillas you got Machaca.

Our favorite is French dips....just slice the beef....heat it up.... put it in a hoagie bun and make some Aus jus (It comes in an envelope, you just mix it with water) and dip it in. So Yummy!!!
Another favorite is is Philly Steak sandwich...sliced beef with grilled onions and peppers and topped with swiss cheese...put in oven to warm up and melt the cheese and then put on a hoagie bun.
I think I'm gonna go eat...this made me hungry!!!! Bye!!!

Here in the south we have a sandwhich that we call a roast beef po-boy. Just add brown gravey on french bread,let.tom,mayo,and swiss cheese.
