Try the recipe that's been circulating on the internet for years called Neiman Marcus Cookies. The story is untrue, but the cookies are fantastic. They include chocolate chips, shaved chocolate, nuts, and ground oatmeal. You could substitute M&M's, flavored chips, dried fruits, and various nuts (macademia, pecan, walnut, almond, etc.) to give the jar more variety. The recipe makes a huge batch, however, so you'll have to figure out how to resize it to fit in the jar, and adjust the 'extra' ingredients that will be added when the cookies are made.
A better alternative is to get jar recipes that are already proportioned correctly. One possibility is the Cookie in a Jar website, but just search for "jar cookie recipe" to get other results.
