I am gonna make a cookies n cream fudge and it calls for almond bark or vanilla candy coating. Can I use Vanilla Bakers Chocolate instead?

You can use the White Bakers Chocolate, it will just give you a different taste. Bakers chocolate is intended to be baked into something, where other ingredients will add flavor, such as brownies. In fudge, the chocolate is a major component, so it would be best to follow the recipe, unless you want a unique tasting fudge, one that either people will love, or they will hate, depending on their taste buds.

Chocolate melts better the higher the cocoa content. Chocolate with a cocoa content of over 30% is best for melting for use with baking or even chocolate fountains. White chocolate nearly always has a cocoa content under 30% so doesn't melt well. You might also find that it will go from beginning to melt to over cooked (the doughy consistency you ended up with) too fast. To avoid this melt the white chocoloate on a lower temperature double boiler and thin with vegetable oil. I know it doesn't sound appetising but if you want a good consistency this is all you can do to achieve this.

Yes you can. It's still chocolae, and if it calls for REG bakers choc, then yes you can use it, but I did and the taste wasn't as good as it was when I made it with the regualr chocolate. So try it out, depends on your individual tastes. :)

im no chef or baker, but its probably best to use whats in the recipe unless it says you can substitute for something else, all else fails go on website for candy coatings

Only if it's sweetened. Most bakers chocolates aren't.

it will create a different flavor, and may alter the texture of the fudge. with that said, i bet it will still taste really yummy, and you should give it a try!

Sure. Melt in microwave, stirring every 15 secs or so. Drizzle over top.
