I used margarine to fry the eggs. It left my wife with a hard to get off mess in the pan.

Step 1.) Use non-stick cooking spray.

Step 2.) Buy a coated non-stick pan.

Step 3.) Ignore step 2 and you clean the pan.

Well dang that more than i spent on my whole cooking set but to help you out try pam cooking spray to help the eggs not stick if that doesnt work and you already said no to butter, if you are doing this at home i would say go buy a cheap but good quality nonstick pan and use it for eggs only and as far as oil build up thats a first for me i dont cook with many oils in my nonstick pans but i have used nonstick pans for 10 years and never had that happen if it occurs in the egg pan then wipe it out with a paper towel while still hot and then rinsing with water and washing my pans are kitchen aid so if you cant use oil like it moves the eggs too fast thru system and dont want darker eggs from butter get a small nonstick for these occasions professional pans like that arent great for everything do hope i could help and best wishes in the kitchen

OK this is the right answer!!! (although there have a been a few good ones before ;) )
Don't use butter, I like the taste of it too, but there are milk solids in butter and they will also brown and make the egg stick.
Use margarine or cooking oil.
Don't get the pan too hot, not as hot as you do with a non-stick skillet.
Now if you still have a little stick, it's ok, just fill with warm soapy water when you're done. Let it sit for about 10 minutes and it will clean up easily.
Re: the non-stick. EEEW! don't bother, you'll end up with little non-stick flakes in your eggs.
Stainless is the way to go. Eggs take a little practice and still are a little more clean up than others but anything else will soak right off.

Go out get a non-stick frying pan just a small one and use it just for eggs.

Alternatively the dutch and belgian approach. Wait till the eggs are nearly done take off the heat and put to the side whilst you sort other stuff out coffee etc. The fat cools and becomes more grease like allowing you to slide it off easier still may stick a bit.
You can use vegetable oil too this burns less than margarine.

I would go and get the little frying pan tho save you a lot of trouble and if you use it just eggs it will last years.

The frugal gourmet, Jeff Smith, always said hot pan; cold oil food won't stick.

Heat your pan and add oil not butter. This is should help. This has worked for me for stainless steel pans.

Although a small non-stick pan is good for frying eggs. I like to use pam but if you heat the pan and then use it it burns.

Also while cast iron pans have to be seasoned and is necessary for it's use.. you can't season a stainless steel pan.

High heat is the ENEMY! Eggs are mostly protein, so they will stick even worse if you use higher heat. The key is VERY low, even heat and keep watching them! Butter burns easily, but I don't like PAM, as it has lots of additives, which may or may not be healthy. Use butter or margarine, or better yet, canola oil. It doesn't leave much after-taste. You can season the eggs with herbs and spices and of course, GARLIC!

And, yeah, clean your own pan, man, as someone said! (Wives LOVE this!...hell, people everywhere love a person who cleans up their own messes).

Next time you get some $, invest in a high-end omelette/sautee pan, preferably copper, but stainless steel w/copper bottom will do.

Y'know, if Ozzie Osbourne can make "Wakey-wakey, eggs and bakie", so can YOU (I saw him do it on a documentary--he must've cooked 8 lbs. of bacon!).

don't use stainless steel to fry eggs. if you must fry eggs (much better to soft boil) get a good little high-end coated pan and never use it for anything else. otherwise, you could try to get an old well-seasoned cast iron frying pan. they are the best. you can cure your own but it takes a long time. read about it on the web. quick fix is pay $25-$45 for a great teflon coated 6-inch pan from a discount place likes sam's or even target or walmart. not one of those light, tinny sort of pieces of junk with fake teflon. they are only $5 but will be in the garbage within a few days.

There is a trick with any pan, let it get quite hot before you put the margerine in then turn the pan down to med. low heat before adding the eggs. Use a lid to cover the pan while they cook. Perfect eggs you don't have to even flip. I know some people use cooking spray but I don't like the chemicals in that stuff. Hope this helps.

Try using a non-stick cooking spray (like PAM) along with the margarine. Also, try turning the heat down on the burner; it may take longer to fry the eggs, but they'll be less likely to stick.

I was trying to cook eggs with stainless steel pans also and it always made a big mess. I finally gave up and bought my self a non stick frying pen.

Try using a baking spray that has Flour in it and heat it up before the eggs get put in it. There shouldn't be a Taste difference... Just an easier mess to clean! Or Try Olive oil it comes in a spray.... Always use the plastic non stick utensil so you don't scratch the pans!
