Italian Turkey Vegetable Soup


1-2 pounds of ground turkey
4 medium sized red potatoes
2 cups chopped cabbage
1 cup chopped carrots
1 cup chopped celery
1 medium yellow onion, diced
1 can corn, drained
1 can green beans, drained
1 can kidney beans, drained
1 15 oz. can tomato sauce
1 can diced tomatoes with juice
2 tsp. dried basil
2 tsp. dried oregano
2 tsp. dried parsley
2 finely chopped cloves of garlic
8 cups of water
salt to taste

Cook turkey in a large pot with onion. When turkey is browned, add cabbage, carrots, celery, and potatoes. Sautee until the vegetables are half cooked. Add the rest of the ingredients and simmer until vegetables are done, about 20 to 30 minutes. Serve over cooked rice, or any kind of cooked noodles, or by itself. Serves many!

One of our family's favorites is a stew that you cook on low for 5 hours.It's a hearty meal and is great served with biscuits. I have even made it with browned ground beef instead of stew meat. I run the hamburger under hot water in a strainer to get all the fat off.

Football Stew

2 lbs. lean stew meat, 1 lb. carrots (diced),1 large onion (diced),4 large potatoes (diced),1 stalk celery (diced), 2 tsp.sugar,2 tsp.salt,2 tsp. tapioca, 2 cups tomato juice

Place meat in bottom of pan. Cover with meat with vegetables. Mix sugar, salt and tapioca together and sprinkle over meat and vegetables. Pour Tomato Juice over all. Do not mix up or stir. Cover tightly and place in 250 degree oven for 5 hours. DO NOT PEEK!!!

This is very good & healthy for you...lean meat...lots of veggies and the tomato juice....and you know what they say nothing is better for you than tomatoes!!! This is about 350 calories for a hearty 1 and half cup serving. You could even make it less calories if you'd substitute ground turkey for the meat. ENJOY!!!!

Taco Soup
2 pounds ground beef
1 large onion, chopped
1 can pinto beans
1 can whole kernel corn ,drained
1 can stewed tomatoes - mexican style
1 can Rotel tomatoes
1 pkg. taco seasoning mix -(opt.)
1 pkg. original hidden valley ranch dressing(dry)
2 1/2 cups water or more, to make soup broth
PREPARATION:
Brown ground beef and onions in a large pan, drain off fat. Add remaining ingredients and simmer for an hour or so. When ready, serve in big soup bowls, and have a skillet of hot cornbread to eat, too.

what about a veggie stir fry ( you use the veggies that you love, add chicken if you like. yum yum)

you can try baked fish with veggies

try baked stuffed chicken breast (you can stuff with rice or dressing) use a low fat cream of chicken soup or cream or mushroom to pour over the chicken.
