The biting thing is, most cats do not like to be picked up at all so he is trying to defend himself and/or trying to get you to release your grip. Just don't pick him up unless absolutely necessary. The countertops, use a spray bottle of clear tap water whenever you catch him and keep the butter put up. What do you mean he has been with a different person? Did you have him stay with someone when you went somewhere? Obviously by his smell, he's been getting into garbage. He also must not be cleaning himself very well. You can get cat wipes to clean him down and save yourself the pain of trying to bathe him.

First, make sure he is neutered. When he bites at you, GENTLY lay him on his back, stare him down (until he looks away) and growl at him. It lets him know you are ALPHA and the behavior is not tolerated. If that still does not work, a water spray bottle/whistle everytime he gets somewhere he should not may help. Cover the butter! The odor thing you will not stop unless you stop him going outside.

Keep a spray bottle of water on the counter and spray him every time he goes on the counter.
I give my cats baths when they smell bad.
Sometimes cats that are overstimulated will bite. Our male is like that. When we got a female kitten, he stopped biting as much and he actually let the female nurse on him for comfort.

If you don't want to touch him but he does things that are naughty, get a squirt bottle and fill it with water, spray them whenever they are being naughty. That is what I do with both of my cats and they hate it. It is to the point that if they see me pull out the bottle they will jump off of the counter. Good luck!

keep your cat inside who knows what kind of germs the people who pick him up has...if they stink bad enough to pass the smell onto your cat then that is not good for your cat....also, he is picking up defensive habits from being outside try keeping him indoors so that he will calm down and if he isnt fixed please get him fixed this will also calm him down
