Alright, I get to make dinner tonight, but I need an easy and simple recipe for baking Chicken thighs...basically I have chicken, the basic seasoning ingredients, Cream of Chicken Soup, Cream of Mushroom Soup, that kind of thing. If you know any good recipes that have things like these, I would be so greatful!

My mom had a great chicken and rice casserole recipe:

Chicken Rice Casserole

INGREDIENTS:
1 cut-up frying chicken
1 cup long grain white rice, uncooked
1 envelope onion soup mix
1 can cream of chicken soup
1 1/2 cans water
4 ounces can sliced mushrooms
1 teaspoon salt
1/2 teaspoon pepper

Combine everything except chicken, mixing well; put into casserole. Arrange chicken on top. Bake at 350° for 1 hour, covered, then uncover and bake 30 minutes more, stirring once.

Using thighs only is fine.

Two-Way Casserole

1/2 cup onion (chopped), 2 T. margerine,1 can cream of chicken soup, 1 can cream of mushroom soup, 2/3 cup milk, 1/2 t salt, 1/8 t. pepper, 3 cups cooked chicken (cut up), 4 cups cooked noodles, 1/2 cup shredded cheddar cheese

In a sauce pan cook onion in margerine until tender, add remaining ingredients except cheese. pour into 2 qt. shallow baking dish (12X8X2) Bake 400 degrees F for 25 mins. or until hot. Top with cheese and bake till cheese melts. Makes about 7 cups.

If you don't have all these ingredients...you can use other stuff like if you don't have noodles use macaroni...if ya don't have cheddar cheese use any kind of cheese.

Chicken Ritz Casserole

Ingredients:
5-6 chicken breasts, cooked
1 can cream of chicken soup
1 can cheddar broccoli soup
about 1/4 soup can of milk
1-1/2 c. sour cream
2 c. cooked minute rice (1 c. prior to cooking)
dash salt and pepper
30 to 40 Ritz crackers, crumbled
Butter
Cooking Instructions:
Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.

Tex Mex Chicken and Rice Bake
1 can (10 oz/284 mL) Condensed Cream of Chicken Soup (regular or low fat)
1 soup can 1% milk
3/4 (175 mL) cup uncooked regular long-grain white rice
1 1/2 tsp (7mL) chili powder
1 1/2 cups (375 mL) mixture of red and green pepper strips, chopped onion
1/2 cup (125 mL) frozen corn
4 boneless, skinless chicken breast halves (about 1 lb/500 g)
1/2 cup (125 mL) shredded Tex Mex cheese (or Cheddar and Monterey Jack mixture)
Mix
soup, milk, rice and chili powder in shallow 2 qt (2 L) baking dish. Spread evenly with vegetables.
Top
with chicken. Sprinkle chicken with cheese and additional chili powder, if desired. Cover.
Bake
at 400°F (200°C) until chicken is cooked through and rice is tender - about 45 minutes. Remove cover and broil until cheese is golden and bubbly - about 3 minutes. Remove chicken and stir rice before serving.

Cook the chicken...take chicken off of bone

Take about 12 oz -16 oz wide egg noodles, cooked drained
Mix with large can cream of chicken soup and 3/4 bag shredded cheddar cheese, then add in chicken...put in 9x13 pan top with rest of cheese bake at 350 for about 25 minutes.

Put the ckicken in a deep pot or pan with 2 cups of white rice,mushroom soup salt and pepper,a touch of cayenne pepper and you have a tasty belly warming meal(cook 1/2 hr @ 400degrees then 25 minutes at 350)that's for like 4 thighs.

I know of a really easy recipe but it dosent use those indredients. mix some bbq sauce, soy sauce and a lot of honey together cover the chicken with the sauce and cover whatever you are cooking it in aluminum foil so it dosent dry up and bake in the oven at about 400 for 35-40 min (check a little b4 to make sure) and there it is

Make a marinade using olive oil, lemon juice, grated lemon rind, grated root ginger, salt, pepper and whatever herbs you have lying around. Mix all the marinade ingredients together. Butterfly 2 chicken fillets and place them in a shallow dish. Pour the marinade over the fillets, turning the meat so that it's all coated in the marinade. Leave in the fridge for half and hour and then pan fry the meat on a medium heat. Simple and delicious

put olive oil in your roasting pan and turn your chicken pieces in it to coat them well (regular oil will do)

after coating with oil, arrange how you will cook them and season with a sprinkling of all of these spices...

garlic powder
onion powder
rosemary
thyme
paprika
salt
black pepper
lemon pepper
2 chicken bullion cubes, crumbled

if you dont have some of those, its ok to leave them out

pour about 1/4 cup cold strong coffee into the pan and cover with foil. bake at 350 for about an hour and a half- unitl meat is falling from the bone

use the juice in the pan to make a gravy... put it in a pot and thicken with a bit of cornstarch mixed with water, bring to a boil and u have gravy

add mashed potatoes and a veggie... DINNER!

EASY OVEN FRIED MUSTARD CHICKEN

1 1/2 tbsp. mustard
1 tbsp. lemon juice
5 lg. cloves of garlic, chopped
1/2 tsp. dried rosemary
1/2 tsp. oregano
Fresh ground pepper to taste
6 chicken thighs, skinned
6 tbsp. grated Romano cheese
3 c. bran flakes cereal
Lemon slices
Fresh herbs to garnish

Preheat oven to 350 degrees. In small bowl combine mustard, lemon juice, chopped garlic, rosemary, oregano and black pepper. Coat chicken in mustard mixture. In ziplock plastic bag combine bran flakes and Romano cheese. Seal bag and crush flakes. Place chicken pieces in a bag a few at a time and shake to coat with crumb mixture. In baking dish coated with non stick spray, arrange chicken in single layer. Sprinkle remaining crumbs over top. Cover with foil and bake 20 minutes. Remove foil, bake 20 minutes longer or until juices run clear when pricked with fork. Garnish with lemon slices and fresh herbs.
