I want to make spaghetti but don't have any meat around around the house to put in it. Does anyone have any sugestions of how i can spruce it up?

Marinara sauce
6 garlic cloves, chopped
2 medium onions, chopped
6 tablespoons extra-virgin olive oil
2 32-ounce cans whole tomatoes in juice
salt to taste

1. In a heavy saucepan over medium low heat, cook garlic and onions in olive oil until softened, about 7 minutes, stirring occasionally.

2. Add tomatoes and juice, along with a little salt, if desired. You may mash the tomatoes with a fork (although some of us prefer to squash them with our bare hands before adding them to the pot) and simmer, uncovered, stirring occasionally until thickened, about 1 hour.

Makes about 5 cups plain sauce.

Possible add-ins:
Add to garlic and onions as they soften:
1 medium green pepper, seeded and chopped

Add to tomatoes:
Dried or fresh basil
Reconstituted dried mushrooms, or fresh ones, chopped

Add during the final five minutes of cooking:
Oil-cured olives, pitted and coarsely chopped
Capers
Red wine
Cream
Grated cheeses
Sugar (just a touch, if your sauce is too acidic)

I'm not sure if you want the traditional tomato sauce or not...but you could always make your own alfredo sauce.

It's pretty easy if you have butter, and of course cheese!

1/2 cup butter, cut into 1/2-inch dice
1/4 cup freshly grated Parmigiano-Reggiano
Salt and pepper

Drain the pasta, reserving the pasta water, and place in a large, heated bowl.
Add the diced butter and grated cheese and toss with tongs or other utensil until the butter and cheese have melted, adding a splash or two of the pasta cooking water to keep the mixture from getting too "tight". Season with salt and pepper, to taste, and serve immediately.

keep cheese on hand, I don't like traditional spaghetti pasta we eat mostly shaped pasta, penne, farfalle, rotini. After the pasta is cooked I put it back into the same pan, add whatever pasta sauce, homemade or jar, marinara, tomato sauce, meat sauce... then add a cup or 2 of shredded cheese, my brats love the mozzarella cause it gets really stringy. just throw it all in the same pan mix it really well and serve with bread, salad, we like chicken so I'll usually boil chicken breast tenders, chop them up warm them with the sauce so they absorb some of that flavor mix it all up and everybody loves this fast easy meal. Great thing is you don't have to have meat.

Vegetarian Spaghetti Sauce

2 Tbsp olive oil
2 small onions, chopped
3 cloves garlic, chopped
1 1/4 cup zucchini, sliced
1 Tbsp oregano, dried
1 Tbsp basil, dried
1 8 oz can tomato sauce
1 6 oz can tomato paste
2 medium tomatoes, chopped
1 cup water


1. In a medium skillet, heat oil. Sauté onions, garlic, and zucchini in oil for 5 minutes on medium heat.
2. Add remaining ingredients and simmer covered for 45 minutes. Serve over spaghetti.

How about trying to slice and half courgette, fresh mushrooms, finely chopped garlic and cherry tomatoes. fry in a little olive oil, season with salt and freshly ground black pepper and herbs of your choice. toss thru pasta and serve immadietly. with some parmesan. delicious and quick.

I think that this would be the best time to just experiment with what you have some of the best things i have ever made were just thrown together

Make wolfshadow's alfredo and addit to the marinara. It'll be great. Add some veggies and make it primavera.
