They are relatively dry when you buy them since most likely they are roasted and lightly salted.
They may get stale though... where the moisture in the air can take the crunch out of the pistachios by ever so slightly "sog" out the nut.... so it's the opposite effect of what you're asking.
Besides will the be out that long once you have them out on the coffee table?

Ours were out for the whole of Christmas and they were still good on news years day, they are naturaly oily so they can survive, maybe if you left them out all year rthey would rot but are addictive and never really last that long....

I find they can taste stale if you don't keep them in something like a jar, bag or tin.

no, they never have for me we used to always leave them out, it might be better though if they are in a sealed jar
