I'm stuck at home in the ice storm here in Oklahoma and need a yummy new twist on the old chicken and rice recipe..anyone have any suggestions???

i am also in oklahoma! EWWW Water damage galore from the storm!

anyway for chicken and rice...

if its minute rice, just put it in the pan- if its regular rice, cook it first

then place your raw chicken on top of the rice... season as desired and cover with mixture below...

1 can cream of mushroom soup,
1 soup can of milk or cream,
1 cup shredded cheese (any kind)
1 tsp each, salt, pepper, garlic and onion powder

pour over rice and chicken...

bake covered until chicken juices run clear... at least 1 hour

If you have more than just an hour or two here's is good crock pot recipe:

Velvet Chicken with Mushroom Sauce

2 cans cream of mushroom soup
1 1/2 cups milk
1 cup white wine
1 cup uncooked rice
1 envelope onion soup mix
6 chicken breasts, boneless and skinless
6 Tbsp butter
Salt and pepper to taste
Grated Parmesan cheese

In a large bowl mix the cans of soup, milk, wine, rice, and dry soup mix. Place chicken breasts in the bottom of the crock pot. Place one tablespoon of butter on each chicken breast. Pour the soup mixture over the chicken. Season with salt and pepper. Sprinkle with parmesan cheese. Cover and cook for 8-10 hours on low or 4-6 hours on high.

I made this for the first time just the other night. It was really good and very easy to make. I used a wild rice mix rather than white rice. Also, I used low fat soup, milk, and parmesan and it was still very flavorful. Enjoy!

Creamy Baked Chicken and Rice

* 1 (6 ounce) box long grain rice mix
* 1-1/2 pounds boneless, skinless chicken thighs
* 2 cups sliced carrots
* 1 cup sliced mushrooms
* 2 (10 ounce) cans cream of mushroom soup
* 1/2 cup milk
* 1/2 cup grated Parmesan cheese

Preheat oven to 350 degrees F. Place rice in bottom of a 13x9" glass baking dish or stainless roasting pan; top with seasoning mix. Place chicken evenly on rice, and top with carrots and mushrooms.In medium bowl, combine soups and milk; mix with wire whisk until blended. Pour into casserole dish. Cover dish with foil, then bake at 350 degrees F for 60-65 minutes until chicken is thoroughly cooked and rice is tender. Sprinkle with cheese and serve.

Chicken and Rice Dinner
1 broiler/fryer chicken (3-1/2 to 4 pounds), cut up
1/4 to 1/3 cup all-purpose flour
2 tablespoons vegetable oil
2-1/3 cups water
1-1/2 cups uncooked long grain rice
1 cup milk
1 teaspoon salt
1 teaspoon poultry seasoning
1/2 teaspoon pepper
Chopped fresh parsley
Dredge chicken pieces in flour. In a large skillet, brown chicken on all sides in oil over medium heat.
In a large bowl, combine the water, rice, milk, salt, poultry seasoning and pepper. Pour into a greased 13-in. x 9-in. x 2-in. baking dish. Top with chicken.
Cover lightly with foil and bake at 350° for 55 minutes or until rice and chicken are tender. Sprinkle with parsley before serving. Yield: 6 servings.

This is an easy and tasty recipe for chicken, one of my favorites. Mix some bbq sauce, soy sauce and a lot of honey together cover the chicken with the sauce and cover whatever you are cooking it in aluminum foil so it dosent dry up and bake in the oven at about 400 for 35-40 min (check a little b4 to make sure) and there it is

Rice in bottom of casserole

Twice as much water as rice. Mix juice of one lemon in the water.along with seasonings of your choice and a little parsley.

Can of chicken soup on top of this.

Sliced onion on top of soup.

Chicken pieces on top of onion/soup.

Cover and bake at 350 for one hour.

Icy, freezing rain is just moving into Houston. Houstonians do not know how to drive on ice.... so once again it will be interesting on the freeways here.

i boil me some chicken, and fix my rice, then after my rice is done i mix my rice with a couple cans of cream of mushroom, then i put the rice and chicken in a pan and bake in the oven for about 30-35 min on 300 and my meal is done. you can add cheese if you wont to.
