I don't know if it will affect the taste too much or what. I'm making a spinach lasagna with it. Thanks!

Yes you can. The regianno may have a little bit stronger flavor, but they are pretty much the same. I do it all the time.

WIthout seeing the recipe, I can still guarantee you that cheese came from a wedge, not a green can. No chef I know would use the stuff from a can exactly for the reason you gave-powdery texture. Use a wedge and either buy a fine grater or one of those winding graders like they have at the Olive Garden. Fresh is definitely best. However, on a hot pasta dish it's best to grate it on top rather than incorporate it. The cheese will melt and ball up if you try to stir in into a hot pasta dish. It's best for topping only. That, or melting in a white sauce.

Of course. It's a better form of Parmesan and might have a stronger smell and flavor, so you might want to use a little less. But you'll definitely notice the flavor more.
