Can Parmesean cheese be substituted for this cheese? Is there a huge taste difference? I am needing this ingredient to make Fried Ravioli for the first time.

YES! the parmigiano reggiano is more of an authentic Italian cheese. The flavor is a little stronger and nuttier. Most americans lean more toward the parmesean it will be fine.Enjoy!

Real Parmigiano Reggiano is widely considered the king of all cheeses. It is made under the most exacting of standards, only in five authorized provinces near Parma, Italy. To tell if it's "real," look for the distinctive tan-colored rind that has the name pin-stamped into it over and over. It is expensive and usually only available at high-end gourmet or Italian markets, but well worth it. The taste and texture is unsurpassed, and it does not contain the fillers, waxes and other ilk of supermarket parmesan cheese. The only second choice to geniune Parmigiano Reggiano would be Grana Padano. If you can't get Parmigiano Reggiano, opt for the Grana Padano...don't settle for the Kraft-type parmesan sprinkles found on the shelves of the local grocer. Try grating a tiny bit and retaste. The parmesan and romano cheeses I use had a different taste than the cheap canned stuff I was used to, but it seems to have a more pleasant taste grated than a piece right off the block. Even so, you can still use it in anything you'd use the other with. You can also mix it in with your regular cheese, making both of them last longer. Good luck.

Both are very similar. They come from vicinal Italian regions. U can use Parmigiano-Reggiano cheese to meke the ravioli.

Yes of course. Parmigiana-Reggiano is very expensive because it's imported from Parma but the flavor is well worth it. I always substitute Parmesan with an "s" which means its domestic, just as good.

Regiano is the expensive version.

I'm sure whichever you have will be fine.

It's home made ravioli and it will be delicious with Parmesan, which is a very similar cheese anyway.

There's some taste difference but not enough to make me worry. I use them interchangeably. It just depends on which one's on sale when I shop.
