CANTALOUPE SALAD WITH LIME, MINT, AND GINGER

Serve on its own for breakfast or with a scoop of sorbet or ice cream for dessert.

1 cantaloupe, halved, seeded, peeled
3 tablespoons fresh lime juice
3 tablespoons chopped fresh mint
2 teaspoons grated lime peel
2 tablespoons sugar
2 1/2 teaspoons grated peeled fresh ginger
2 teaspoons honey


Cut cantaloupe into 3/4- to 1-inch cubes (about 5 cups) and place in large bowl. Add lime juice, mint, and lime peel; toss to blend. Mix in sugar, ginger, and honey. Refrigerate salad until ready to serve, stirring occasionally, up to 3 hours.

Makes 4 to 6 servings.

I would make up a batch of ginger ice cream - it so refreshing and can be eaten on it's own or to accompany other desserts. That way you could use a lot of ginger at once, as obviously you would freeze it.

I have included a recipe, but if you didn't want to make ice cream from scratch, I would follow the first part to make the ginger syrup (using less sugar) then when it is cooled, beat the syrup into a very good quality, softened vanilla ice cream, then refreeze.

Delicious and tangy.

Ginger Carrot Soup

INGREDIENTS
1 tablespoon olive oil
2 large yellow onions, chopped
1 pound carrots, cut in chunks
2 cups low-fat chicken broth
2 tablespoons crystallized ginger, minced
1 teaspoon cinnamon
1 1/2 cups orange juice
1/2 cup fat-free half-and-half
Chives for garnish

DIRECTIONS
In a large pot, saute onions in olive oil until soft. Add carrots, broth, ginger and cinnamon. Simmer until carrots are thoroughly cooked, 30-40 minutes. Transfer to a blender or food processor and process until smooth. Stir in juice and half-and-half. Serve warm or chilled, garnished with snippets of chives.

OR

Ginger Punch

INGREDIENTS
2 cups water
1/2 cup white sugar
2 (1 inch) pieces crystallized ginger
4 cinnamon sticks

3 cups orange juice
1 cup pineapple juice
1/2 cup lemon juice
1 liter lemon-lime flavored carbonated beverage

DIRECTIONS
In a sauce pan, combine water, sugar, crystallized ginger and cinnamon sticks. Bring to a boil and simmer for 5 minutes. Remove from heat and set aside to cool.
Pour syrup into a pitcher. Add orange, pineapple and lemon juice. Chill in refrigerator. When ready to serve, pour into a punch bowl and slowly add the lemon-lime soda.

Ginger syrup: tastes great and you can marinate you're meat in it (combine with soy sauce).

Or your large large large grandparents are. in the experience that they are then the gene will be exceeded all the way down to you figure, notwithstanding the gene is recessive so one in all of your moms and dads only carry the gene, notwithstanding it would not teach. The gene is then exceeded to you and it shows. =] x
