Bring a large pot of lightly salted water to a boil. Add lasagna noodles and cook for 8 to 10 minutes or until al dente; drain.
In a skillet, brown ground beef. Using a fork, mix cottage cheese, eggs, garlic powder, parsley, salt and pepper. In a separate bowl combine tomato paste and tomato sauce.
In a 9x13 inch baking pan, layer noodles, ground beef, tomato sauce mixture and cottage cheese mixture. Two layers of each will fit. Cover with tin foil and bake for 30 minutes. Remove tin foil the last 8 minutes of baking time.

Here's my recipe for Lasagna....I know some people don't boil their noodles ....they put them in uncooked but I think the boiled noodles are better.

LASAGNA

2lbs. ground beef, 1/2 cup Parmesan cheese, 1-32oz. jar of Prego spaghetti sauce, 1-8oz. pkg. lasagna noodles, 2 eggs, 1-24oz.ricotta or cottage cheese, 2 tsp. salt, 1tsp. pepper, 2T. Italian seasoning, 2lbs.shredded Mozzerella cheese

Brown ground beef. Drain grease. Add Spaghetti sauce, eggs, seasonings, and parmesan cheese. Mix. Simmer for 30 mins. Boil noodles according to directions. Layer bottom of 9X13 pan with 1/3 of meat mixture, Add layer of noodles, add 1/3 of cottage cheese, add 1/3 of mozzerella cheese. Repeat layers until 3 layers have been added. Last Layer should be Mozzerella cheese. Bake in 375 degree oven for 30 mins. Cool 15 mins. before cutting.
This is a super delicious recipe...Hope you enjoy it!!!

When I don't have too much time I also make a Mock Lasagna( it's made in a crockpot) ...here's the recipe:

MOCK LASAGNA

1-8oz pkg. lasagna noodles, 2 lbs. ground beef, 1 clove of garlic (minced), 1 onion chopped, 1-12oz. cottage cheese, 1-12oz. pkg. shredded mozzerella cheese, 1 jar of Prego spaghetti sauce

Brown ground beef and drain off grease. Break noodles into bite-size pieces. Spray crockpot with pan-spray and put all ingredients in the crockpot. Stir to mix. Cover and cook on low for 7-8 hours or cook on high for 3-5 hours.

This is super easy, and really really good. I have never had a complaint...

Simply Lasagna

1 lb. ground beef
2-1/2 cups KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese, divided
1 container (15 oz.) POLLY-O Natural Part Skim Ricotta Cheese
1/2 cup KRAFT 100% Grated Parmesan Cheese, divided
1/4 cup chopped fresh parsley
1 egg, lightly beaten
1 jar (26 oz.) spaghetti sauce
1 cup water
12 lasagna noodles, uncooked

PREHEAT oven to 350°F. Brown meat in large skillet on medium-high heat. Meanwhile, mix 1-1/4 cups of the mozzarella cheese, the ricotta cheese, 1/4 cup of the Parmesan cheese, the parsley and egg until well blended; set aside. Drain meat; return to skillet. Stir in spaghetti sauce. Pour water into empty sauce jar; cover and shake well. Add to skillet; stir until well blended. (You should have about 5 cups sauce.)
SPREAD 1 cup of the meat sauce onto bottom of 13x9-inch baking dish; top with layers of 3 lasagna noodles, 1/3 of the ricotta cheese mixture and 1 cup of the meat sauce. Repeat layers two more times. Top with remaining 3 noodles and the remaining sauce. Sprinkle with remaining 1-1/4 cups mozzarella cheese and remaining 1/4 cup Parmesan cheese. Cover tightly with greased foil.
BAKE 45 min. Remove foil; continue baking 15 min. or until center is heated through (160°F). Let stand 15 min. before cutting for easier serving.

P.S. I always top this with loads of extra cheese...make sure to buy extra!!

A good idea is to use the jar spaghetti sauce in your favorite flavor. Fresh lasagna pasta can usually be found in the produce section of your grocers, sometimes it's called wonton/lasagna ...Using fresh eliminates the need for boiling your lasagna noodles...............
