In some cases it's because they have to fit in with silly social rules on how they should behave or risk being shunned by most people. If their behaviour when 'being themselves' were to break these rules then they're forced to avoid it.

In other cases they might be deliberately putting on a false face to try and fit in with or take advantage of certain groups of people.

In yet other cases, some people learn the hard way that "being themselves" gets them nowhere. For example, many men who are naturally polite and "nice" repeatedly get rejected by some women who tell them they're "too nice". So they feel forced to hide that side of themselves to get anywhere. Sad but true.
