I think that it's because there are sooo many ways to make it and people develop a taste for their own families way of making it. Things like a few ingredient changes or how long someone cooks the potatoes for can completely change how it tastes.

I think you might be talking about either a difference in taste (some potato salad is made with mustard, some with mayo, some salads are hot, some are served cold) and the kind in the grocery store is GROSS to me no matter what- they use nasty oils in them. Also, some people are worried that the salad might not have been kept at the right temp., since it does spoil easily. I grew up eating cold mustard style and it's all I will eat.

First of all, not everyone knows how to make potato salad. Some people really can mess it up. Second, not everyone likes all different kinds of potato salad. Some people only like one kind. Potato salad really is one of those foods that if you don't know what you're doing, you really can mess it up and people will not trust your cooking. My potato salad is requested by people everywhere I go. Word has gotten around. If there's a party or get together I'm going to, I'm always asked to make potato salad and or macaroni salad. I get attacked when I walk in the door and the bowl is empty in minutes. No lie.
I am one of those people who doesn't like everyone's potato salad. I don't like sweet pickles in traditional potato salad. I also don't like egg in it always either. I don't like it made with Miracle Whip. I only like real mayonaise and not a ton of it. When I think of potato salad, I don't think sweet. There have only been 1 or 2 store potato salads that I have liked. Same with cornbread. I don't like it cakey or sweet. If I want sweet corn cake, that's what I'll make corn muffins or corn cake.

I'll eat anyone's potato salad, just don't go stickin' any dill in it.
Most folks make the salad with mayo and if it's not stored properly it can become tainted easily. I'm guessin' since this is common knowledge, some people are wondering how it was kept and err on the side of caution.

That's because they are ignorant! People make their potato salads differently. I guess it depends on how the tastebuds feel about a different taste or texture in the Potato salad! Store brands can tend to become dry from sitting on the shelf. But it's not like you can't take it home and doctor it to suit your needs!

I can attest to that! I can't eat anybody's potato salad but my mom's. My main reason is that I can't trust everybody's house. They may have animals, their fridge might not be cold enough, or they could just have nasty family members who are constantly sticking their fingers in the potato salad bowl, and not washing their hands before the next dip. I'm a germophobe and I don't trust many peoples cleanliness.

Everyone has favorite recipes and potato salad ranks pretty high on the list.
Store bought is too watery, and you can't trust it to be fresh. My potato salad is the best, where did you hear otherwise?

The Romans used to say, " De gustibus non est desputatum ". You can't argue about taste.
That tells it all. What is heavenly ambrosia to one person, is inedible to another. I personally wouldn't give ten cants for a truch load of lobster tail. And even less for the same amount of trufels.

Because everybody don't know how to make it sometimes it would be DRY ot some sometimes to WATERY or maybe not season the right way. But I can make it in it is GOOOOOOOD.
