If you're tired of the same old clam chowder or oysters on the half shell then try these.

Oyster Fritters
1 quart shucked oysters, liquor reserved
1/2 teaspoon salt substitute
1/2 teaspoon pepper
1/2 teaspoon baking powder
1 cup pancake mix
1 egg
2 fluid ounces half-and-half
Crisco, for frying

Beat together the egg, salt, pepper, baking powder, and pancake mix.
Add half and half; beat until smooth.
Add the oysters and liquor.
Stir until the oysters are mixed well.
In an iron (or heavy) skillet, melt Crisco (about ½ inch deep).
Drop the oysters in hot oil.
They will spread out like a flat fritter.
Fry until cooked through.
Serve hot, with pickled relish or cocktail sauce.

Clam Linguini
1 tablespoon extra virgin olive oil
4 cloves garlic, finely chopped
12 fluid ounces canned baby clams, include liquid
1/8 teaspoon cayenne pepper
1/4 teaspoon dried oregano
1 tablespoon lemon juice, freshly squeezed
3 tablespoons finely chopped fresh parsley
8 ounces linguine, dry
4 tablespoons grated parmigiano-reggiano cheese

In a large frying pan over medium heat, heat olive oil.
Add chopped garlic and saute gently until just golden, about 1 to 2 minutes: DO NOT BROWN.
Add clams including liquid, cayenne, oregano and lemon juice and simmer for 2 to 3 minutes.
Add chopped parsley and continue to simmer for 1 minute longer.
Cook linguine according to package directions.
Drain and transfer cooked linguine to a large serving bowl.
Pour prepared sauce over pasta and toss to coat.
Sprinkle with grated parmesan cheese and toss lightly.
Serve immediately.

CLAMS CASINO...Leave the clams in their shells. Place an uncooked piece of bacon on top, just the size of the shell. Sprinkle a little bit of bread crumbs on top. Bake @ 350 degrees until the bacon is cooked. Yummmmmmmm!
STUFFED CLAMS... Buy some FRESH chopped clams from the fish dept.of your favorite shopping place, along with an onion and a green pepper, and also a small box of stuffing mix. Fry a small amount of chopped onion and pepper until soft but not soggy. Cook the stuffing mix. When that's done, add the pepper and onion to it, and the chopped clams. (uncooked) Stuff the shells and place in a 350 degree oven for APPROX. 15-20 mins. You'll have to check them with a fork. When they feel a LITTLE bit hardened, it's time to take them out. Enjoy!!!!!!!!!!!

try steaming the clams with red chiles, lime juice and tequila. thow in some peppers and onions it is really yummy.

perhaps go wild and squeeze some lemon juice on.

private recipe handed down in my family for generations.

you should also try mussels. these i would steam with garlic, butter, lemon and white wine. maybe even a cream reduction. prefer to keep it simple.
