Funny, my mom asked me the same question today. I have no answers for you! It could be those things if that is the only time you experience this, but "night sweats" could occur from a lot of things. I didn't notice if you were female but after menopause it's not uncommon, but certain medical conditions can cause it too. Get a check up. Tell your doctor, and if you are on medication, find out by reading the specifications of the meds if that's one of the side effects. The pharmacist can print you out a sheet.
You mention blood sugar so I don't know if that's a factor. I can't imagine it would be on it's own.
Do get it checked out as night sweats often indicate something has changed in your body.

Anxiety could cause a person to sweat profusely. Also, some antibiotics can do that as well. However, since you say this always happens when you change the sheets...maybe whatever detergent/fabric softner you use on your sheets you are allergic to, so you may want to get some hypoallergenic detergant.

Many times, this is caused by medications. Do a research on all the meds you are currently taking and see if night sweats is one of the side effects (even if a lesser known side effect!).

This could be a sign of a serious problem. It could be any number of things, and might just be simple allergies, but you need to see a doctor soon and tell her what's been going on.

you could be dreaming nad be really really nervous. if you are sweating that much, you need to go to a doctor before you become dehydrated! Quickly!

it could be a lot of things. are you diabetic? having nightmares, stressed? without more information and a medical history i couldn't really say for sure
