This is a probe that one sticks in vegetables ,meat,fish etc exposed for human consumption, to find out whether they are fresh or going bad.

It works on the principle that any foodstuffs going bad do so with an increase in the number of microorganisms like bacteria and fungi.
The food probe tests just that.

It is used by health inspectors.

there are two types i know of.a probe thermometer and a bacteria probe

a thermometer, you stick it in the meat to see if it is properly cooked
