I'm not sure what it does for muscles other than giving you another day of rest, but giving blood gets rid of excess iron.. Something men should do..Not only is it good.. It also benefits someone in need..

Your blood is the transport tissue of your body. When you donate blood, that tissue is being siphoned off, so to speak, leaving one with a reduced Oxygen carrying capacity. This also comes with a limited ability to transport nutrients and carry wastes for excretion.
To answer your question, a limited O2 and nutrient carrying capacity with diminished waste removal, over an extended period, can inhibit performance, much like an intense anaerobic workout.
However, in reality, and depending on your size, the amount of blood taken out is really not enough to affect things too badly.
