Weigh joint first - then its 35 Min's for each 500gr plus an extra 35 Min's. Start by putting in oven on 220degrees for 30 Min's & then lower temperature to 180 for the remainder of cooking time - PERFECT every time. If you want crispy crackling pour boiling water over rind and sprinkle on a little salt before putting in oven. We have just had this as our sunday roast!

Pre-heat your oven to 450 degrees. Brown your roast on all 6 sides (not 4 sides - don't forget the ends!) in a lightly oiled heavy skillet. Remove to a plate. Lightly brown some coarsely chopped onions and thickly sliced carrots in the same pan, and deglaze with a 1/2 cup sweeter white wine (Riesling) or chicken stock. Reduce by 1/3. Place veggies and reduced liquid in bottom of a shallow roasting pan. Place roast on rack on top of veggies. Place in the oven, and reduce the heat to 350. Cook for 25 minutes a pound, uncovered, for 1 hour. Put another 1/2 cup of fluid into pan.Cook until it is 170 degrees (160 is perfectly fine, but some people don't like the fact that it might still have a pinkish tint in the middle). Remove from oven and wrap tightly in foil. Remove veggies into ovenproof bowl and place back in oven that has been turned off. Thicken your sauce, and enjoy! By the way - Chef Orville, if you can't give a safe answer (I've seen some of your other answers), please take the "chef" off of your ID. It is a real disgrace! 160 degrees as an internal temperature for pork is absolutely safe you are taking a chance with Pork at 140 and 150 degrees. Good Luck!

I cook nearly everything at 350 degrees for at least 45 minutes. For a roast it would take longer. Keep testing it with a meat thermometer or look at the color from time to time after that 45 minutes to determine when it's well cooked.

60 minutes per kilo + 30 minutes at Gas mark 7. Pierce with a fork to see if the juices are running clear, if not return to oven for a further 10 minutes.
As for using a microwave to cook a roast.....she is joking isn't she?

20 mins on high heat (220C or Gas 8) then 35 mins per pound at 190C (gas 5-6).
This way you get good crispy crackling. Rub salt into the pork rind after the initial 20 mins blast. Don't put extra fat anywhere near it.

depends on the size. i,ve done a piece for tea tonight i cooked it for 2hours at 125 on electric, or 4 on gas. Pork is a dry meat so dont over cook it, keep it covered with foil.
