I am not a strict vegetarian, I just don't like most sources of traditional protein. I don't like to eat eggs or beans or fish. I will eat boneless/skinless chicken breasts, but that gets old after a while. I will eat hamburger and I like pepperoni.. that's about it. I love nuts and peanut butter, but too much fat content. I love dairy products, just don't drink milk.. I know, I'm weird. Please help me add some protein to my diet. I have insulin resistance and am really trying to eat healthier.. I just don't like most foods.

You can try cottage cheese, yogurt, tofu, soy milk, protein shakes, protein bars.....I doubt you'd like tofu though, since you seem to be picky about what you eat.

I also suggest lean cuts of pork and turkey breast for variety.

Stop counting. The foods u consider rich but like them shud be eaten first when u r hungry. Eat nourishing food with plenty of fresh fruits and vegetables being part of it. Chew each morsel at least 32 times. This will activate signal to the brain as soon as u have had enough. Besides this change in eating style, take regular light exercises and brisk walks every day. U will be able to gain/shed all extra weight gracefully and in a reasonable time span.
