Apfelstrudel
8 ounces phyllo pastry, Thawed (1/2 Box)
26 small ripe, soft apples
cinnamon
2 tbs sugar
butter
breadcrumbs
3 1/2 oz raisins
grated lemon peel and/or a few finely chopped nuts
butter or egg yolk
Place 1 phyllo leaf on a kitchen towel and brush with melted butter.
Place a second leaf on top and brush with butter again.
Repeat until 5 leaves have been used, using about 1/2 c of butter.
Cut the apples into very thin slices and stew them for a minutes with the sugar and the cinnamon. Brush the Strudel dough with some melted butter and sprinkle it with breadcrumbs. Spread the apples and the raisins evenly on top of it. If desired add some chopped nuts and/or grated lemon peel. By lifting the cloth on one side, roll up the Strudel. Let it slide from the cloth onto a buttered baking sheet. Brush the Strudel with some melted butter or egg yolk. Depending on the size it should bake for 30..40 minutes in a fairly hot oven (200xC/400xF). For an extra moist Strudel one may pour 125..250 ml (4-8 oz) of milk onto the baking sheet.

Black Forrest Cake here is a recipe
GERMAN BLACK FOREST CAKE
2 c. + 2 tbsp. all-purpose flour
3/4 c. cocoa
3/4 tsp. soda
1/2 c. shortening
1 c. milk
3 c. whipping cream
1 (21 oz.) can cherry pie filling
2 c. sugar
1 1/2 tsp. baking powder
3/4 tsp. salt
3 eggs
1 tbsp. vanilla extract
1/4 c. + 2 tbsp. powdered sugar
Combine dry ingredients in large mixing bowl; stir until well mixed. Add shortening, eggs, milk and vanilla; beat mixture 3 minutes at low speed of electric mixer scraping bowl occasionally.
Grease two 9 inch cake pans lined on bottom with waxed paper. Pour batter into pans. Bake at 350 degrees F. for 30-35 minutes or until wooden pick inserted in center comes out clean. Cool cake in pans 10 minutes. Remove from pans and cool completely. Split cake layers in half horizontally to make 4 layers. Make fine crumbs using 1 cake layer; set crumbs aside.
Beat whipping cream until foamy; gradually add powdered sugar, beating until soft peaks form. Place 1 cake layer on cake platter; spread with 1 cup whipped cream and top with 3/4 cup cherry pie filling. Repeat with second layer and then top with third cake layer.
Frost sides and top with whipped cream, reserving a small amount for garnish. Pat cake crumbs generously around sides of cake (there may be leftover cake crumbs). Spoon dollops of whipped cream around top of cake; spoon remaining pie filling on center of top. Chill well.
For topping instead of cake crumbs use shaved semi-sweet chocolate that comes in bars. Make a little more whipped cream and the use the 4th layer on cake.

Topping
1 cup walnuts
1/2 cup brown sugar -- packed
2 tablespoons flour
1 teaspoon cinnamon
2 tablespoons unsalted butter -- cut into pieces
Filling
3 cups Granny Smith apples, peeled, -- coarsely chopped
1 tablespoon sugar
1 teaspoon cinnamon
Cake
3/4 cup sour cream
1/4 cup milk
2 3/4 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
3/4 teaspoon salt
1 cup unsalted butter, brought to room temp.
1 cup sugar
3/4 cup brown sugar -- packed
3 large eggs
2 teaspoons lemon peel -- grated
1 teaspoon vanilla
1 teaspoon lemon extract
For topping: Blend walnuts, brown sugar, flour and cinnamon in a processor until nuts are finely chopped. Add butter and cut in using the on/off button, just until clumps begin to form. (Can be made one day ahead. Cover and chill.)
For filling: Mix apples, sugar and cinnamon in a medium bowl.
For cake: Prehat oven to 350. Butter a 13" x 9" x 2" GLASS baking dish. Whisk sour cream and milk together in a small bowl to blend. Sift flour, baking powder, baking soda and salt into a medium bowl. Using an electric mixer, beat butter and both sugars in a large bowl until creamy. Add eggs, one at a time, beating after each addition. Mix in lemon peel, vanilla and lemon extract. Beat in dry ingredients alternately with sour cream mixture in 3 additions each, mixing just until smooth.
Spread half of the batter in prepared pan. Spoon filling on top of batter. Spread remaining batter over filling. Sprinkle with topping. Bake cake until tester inserted into center comes out clean, covering top loosely with foil if browning too quickly, for about 45 minutes. Cool in pan on rack for atleast 2 hours. Cut into squares.
