We only see the increase in Number of human beings. Probably we have the population count for humanbeings. But soul is same for a small ant and human being as per the scriptures. So the scriptures are still correct. We know there are many animals which are extinct. So many water bound lives are extinct. Every living thing has a soul. I believe it applies for plants also. That is the wonder of GOD's creations.

That question was also asked many centuries ago around the 3rd century to St John Crysostom (I think, I will have to check the quotee)...but he said that Given God had created Adam and Eve and breathed in them them breath of life, thus the concept of starting something has already taken place.
Also, Given that when They sinned and were kicked out of the grace of God, their decendants inheritted the same out-of-grace condition, thus they were not newly created souls...Given those two conditions, coupled with the fact that children are the loving extenssional product of husband and wife, Therefore St John says that the souls of a new born is formed as a product extenssion also of the both the parents...That way it is a unique individual created being, but at the same time and extenssion of the original soul that God created...

There is no such thing as soul. By preaching we are made to believe so.
In Tomato and potato cultivation there is no soul involved except the farmer . Of course Quality is more important than quantity.
In the case of human beings, people only are involved in population growth.
Souls neither exist nor they are constant or on the increase as per growing population.

As Destiny pointed out above, nowhere in the Bible are we taught that the soul is something separate and distinct from the person or the body. The soul is you and you are the soul. When you die, the soul dies. Therefore, new souls are simply new people - babies that have been born.
This idea of the soul being separate and distinct is, at the very latest, from Greek philosophy.
Notice what the Catholic Encyclopedia states: “There is no dichotomy [division] of body and soul in the O[ld] T[estament]. The Israelite saw things concretely, in their totality, and thus he considered men as persons and not as composites. The term nepeš [ne′phesh], though translated by our word soul, never means soul as distinct from the body or the individual person. . . . The term [psy·khe′] is the N[ew] T[estament] word corresponding with nepeš. It can mean the principle of life, life itself, or the living being.”
And The Jewish Encyclopedia: “The belief that the soul continues its existence after the dissolution of the body is a matter of philosophical or theological speculation rather than of simple faith, and is accordingly nowhere expressly taught in Holy Scripture.”

All souls were created at once. (The first "Fall") Many souls could not bare to leave (the love) fathers side.
some of the souls that ventured out found this place and liked it. As time went on more and more souls found this place and liked it. once the soul entered the games of this place it is required to continue playing until it is sure it wants to go back to father. (reincarnation) it is the soul that has free will, not so much the human.

When you say you should take into consideration all living organisms including plant and microbs. In that case you question is answerred automatically. The lower order of the living organisms get elevated to human level. In such a situation the population is presently in an insignificant proportion
So souls get interchanged. What I mean is that those human beings who commit sin become lesser living organizms.
In such a condition the living organizms is a constant factor.

Yes the total number of souls are constant. They are divided in 8,400,000 species of life. The soul transmigrates from one body to other till it reaches the human form. In human form you are supposed to achieve liberation and go back to the spiritual world. Since that is not happening the human sould are coming back and animals (specially cows) are getting human bodies and that explains increase in population.

Some are new souls and some are old souls being reincarnated. They are coming from other dimensions of time and space. The 3D world is not the only realm of reality/light/matter.
