I’m trying to gain muscle, I spoke to the trainer at my gym and he said cut out all carbohydrates and eat protein, done some internet research which says if you cut out carbohydrates your body will start to burn away at your muscles for energy. What is the best diet as I am now thoroughly confused!!!

It really is simple. Increase your intake of calories so that you are putting more into your body than you are burning in the gym. Meanwhile, keep your protein intake high from either food or whey protein supplements. A balanced diet including everything from good fats (nuts/avocardo's etc.) to carbs etc.
Stick to this diet whilst working hard in the gym will not fail to increase your muscle mass!
If you want to increase definition in the summer for a 'beach-body', you will simply reduce your carbs making you more 'cut'. Weight training is not rocket science...once you get to learn 'what does what' then you will know as much as anybody else. Even some of us established gym users learn new stuff all the time...some stuff you hear should be ignored...some is usefull.
There is a great article on www.maximuscle.com on how pro rugby players at London Wasps pack on muscle. I have kinda summarised it for you. But do look at this site, for recommended meals and great training advice.

The main issue with muscle loss would be if you did a lot of cardio workout. I'd suggest this is important if you want to do weights anyway. After a session, have a sugary drink (Lucozade or something) which will help substitute the energy used and stop muscle being broken down.
Protein VERY important. I'd suggest eating a decent portion of lean meat twice a day. Be careful with processed meat or cheap cuts because they'll have more fat in, but meat is the easiest way to get protein - unless you try protein shakes. That could work too.
Best of luck :D

try eating six small meals a day. chicken breast, tuna ,eggs and veggies. eating small meals will allow you body do ingest the food to the body but not store it as fat. Also when lifting , go with a higher set of reps instead of low heavy weights. higher reps will give your more definition and endurance and keep your metabalism way up. Oh yeah, water water water water.
