I am only about 30 lbs overweight and the trainer at the gym told me I need to lower my calorie intake by 500 and then burn about 500 a day through exercises.
Your body will only go into starvation mode when you DONT feed it. Eat 5-6 smaller meals a day. Limit the sweets, breads and "junk food"
A big "diet" in Texas right now is the "Before, During, and After" diet. All it is is you drink an 8 ounce glass of water BEFORE your meal, During your meal and AFTER your meal. This will help you eat less as well as clean out toxins from your body.
Good luck loosing the weight, I'm right there with you.

It is a good idea to talk to a nutrionist, but nutritionists are like dentists, you have to find one you like and that can be expensive.
I have been on the absdiet and on the South Beach Diet and they both recommend that you not reduce your calorie intake drastically since that will cause you to ultimately gain more fat lbs when you stop. Loosing weight is also often related to who we are and how we interact with the world. I can recommend the book "The Solution" and "The Pathway" they both give you a method for changing your relationship with food. The absdiet and the South Beach Diet each show that a healthy diet is more about what and when you eat and less about how much you eat.
For example, eating high glycemic foods, like white bread, white rice, or any white sugar/corn syrup product will spike your insulin levels, then when the levels go down you crash and you want more.
Some people also have different brain chemistry and when they eat fast processing sugars the gut produces chemicals that calm down the brain. When this happens food addiction sets in and the cycle is hard to brake. The process actually happens with almost everyone, ever had chocolate? ;-)
I don't know your specific relationship with food but I hope I have given you some ideas to find your way.
I also know someone who lost their gall bladder because they went on a crash diet, your body can start to digest itself I guess.

It depends on how many calories you have left after removing those 500-1000 calories.
As far as I remember, the absolute lowest recommended was eating a total of 1200 calories in a day unless you had agreed to lower with a doctor.
