You are right that we are doubtful, that is why we cant believe everything either...besides only a mental will believe every single view and theory...dun tell me u go arnd believing 10 different OPPOSING theories? Lol...Remember, believing a view is very much different from tolerating a view...
What we need in this planet is mere tolerance, not belief...

It's human nature to judge and want to be right. No one likes being proven wrong. So many will form an opinion they feel is right then lock it up really tight. Once locked up, no one can touch it and everyone else is wrong, no matter what. To be proven wrong is embarrassing and shows a lack of intelligence, so it seems. In reality, intelligence and wisdom is knowing that you’re not always right and there is always something to learn. Many people are happy in there ignorance, but that’s their decision.
The biggest example is that many believe the Bible is 100% accurate and that’s all we need. But, just the facts that we know there are other books out there shows that the Bible is incomplete and possibly wrong in places. This is regardless as to how “true” or accurate the other books are. Not to mention it was written by men, with the inspiration of God; not “by God”. But many are still firm that the Bible is the Bible and the most correct Book on earth.

Judge or deny that anyone else should have a different view?
Maybe because it threatens or would destroy their own views that they are comnfortable with. Often a belief system right or wrong is the only thing that keeps some functioning. Take it away and they fall apart.If aliens were ever to visit the earth Who would be the first to proclaim them evil and demand their destruction? Why the people of the Church of course because their rhetoric would all fall into a heap of untruths. Better hope we never get a visit!

The Bible gives you the instructions for this life. And I do believe in Jesus without any doubts. It is not people I judge that is up to God and God alone, But I will judge other peoples views and answers because that is a choice and God will guide me in that choice. If you don't believe in Jesus that is your choice.That is why God sent his son to die for us,To give you that choice.He died for my sins and I am saved by his grace not because of anything I done.

Unless you can back up your claims with evidence, why should they be respected?
You're quite free to believe in leprechauns if you wish. Demanding respect for such beliefs is a bit silly, don't you think?
Ditto for belief in gods. Just because a lot of people believe it doesn't make it rational.
