Firstly, good for you for letting your parrot explore the house. Grey parrots are often thought of as being the smartest of the parrot species---they are often said to have an intellect equal to that of a 3-4 year old human. Keeping it in a cage all the time would be very cruel.
B/c it is so smart, maybe you can reward-train it. each time it poos in a designated spot, you could give him/her a treat. you might need to be at home full-time 2-3 days for this method to work. Call in sick to work/school if you are serious about it. It may live as long or longer than you, so a few days is minor compared to 60-70 years.

You can't, it's part and parcel of owning a parrot. They usually poo in the same places though, just keep some tissues close to hand or put newspaper on the floor in the particular areas.

FIRST OF ALL YOU SHOULD KNOW THAT ONCE A GREY GOES. . .YOU HAVE ABOUT 20 MINUTES BEFORE IT WILL GO AGAIN. THIS IS HOW I HANDLE IT WITH MY GREY. WATCH FOR THE BIRD TO GO BEFORE YOU TAKE IT OFF THE PERCH OR OUT OF THE CAGE. THE BIRD WILL START MAKE MOVES TO INDICATE IT HAS TO GO WHEN READY, BACKS UP, SQUATS, IMMEDIATELY PUT IT BACK ON THE PERCH OR IN IT'S CAGE. ONCE IT GOES, PRAISE IT AND REWARD IT BY PICKING THE BIRD UP AGAIN. BEFORE YOU KNOW IT YOUR BIRD WILL LET YOU KNOW. MINE TRIES REALLY HARD NOT TO GO WHEN AWAY FROM THE PERCH OR CAGE BUT OCCASIONALLY HAS "AN ACCIDENT" WHICH IS REALLY MY FAULT FOR NOT BEING OBSERVANT. IF YOU'RE LETTING THE BIRD FLY FREELY THROUGHOUT THE HOUSE THIS IS NOT LIKELY GOING TO WORK FOR YOU. IT'S REALLY NOT HARD, SOME WARN THAT IT CAN MAKE A BIRD SICK IF IT REFUSES TO GO OUTSIDE OF IT'S CAGE, AND THAT MAY WELL BE TRUE, BUT IF YOU USE THE 20 MINUTE METHOD, YOU AND YOUR BIRD SHOULD HAVE NO PROBLEM.

Clip his wings and he will stay in one place so will the poo.
Birds poo when and where they feel like it.
You evidently haven't made REAL good friends with your bird yet or you'd be asking how do I keep him from pooing on me.
Just one of the downsides of owning a bird.

One solution, buy what's called a Flight suit it covers the body of the bird but still alow it to fly and it you can also get a leash with it. There is a web site and its afordable, I bought one for my love bird but it take time for them to get use to it. Look up Flight suite you should find it on the web.
