The texts they created are the Vedas, which were written around 1,500 B.C.E. (before common era) and have greatly influenced Indian culture ever since.

I think that Hinduism is the oldest documented religion that is still in practice today. The keywords are "documented" and "still in practice today". Although there may have been other older religions, often times they were practiced in oral societies or they do not have an unbroken history of practice. Also, Hinduism does not have a central leader and contains many different beliefs and practices.

This is a hard question. Elements of Hinduism go back over five thousand years before the Christ. Yet many historians put Zoroastrianism as the oldest "revealed" religion. So it is kind of like comparing apples to oranges. I take revealed to mean a central prophet Zarathustra in the Zoroastrian case.

Archealogists found evidence that man kind worshipped what they thought was the supreme being(s) through women... who were associated with the moon....
... the cult of the great mother where the chief female (BIG MAMA) is dominent has strong evidence in anthropology...
... the reason man kind broke from it is actually many... man kind was driven by his fear of nature and the wonders he could not understand...

Shamanistic ancestor worship of people in the late stone age and it's only known about because various masks etc. have survived in burials. It gradually became replaced by polytheism based on worship of nature deities as hunter gatherers became farmers living in settled communities.
