Pesto is the classic use of large quantities of fresh basil. To make a basic one, 1) grind pine nuts, basis, and grated parmesan or romano (stronger flavor) in a food processor. 2) With the processor going, slowly drizzle olive oil through the drip holes or feeder tube.

I really like to add basil to my meatballs :essentially you combine ground meat, breadcrumbs, a little egg, chopped basil and parsley, and black pepper. Brown them in a heavy pan, and then further cook (until done) in the oven or in a red sauce.

Dried basil shouldn't impart any bitter flavor, but most fresh herbs can become somewhat bitter if they are over cooked. If your working with fresh basil and cooking for an extended period of time, consider tieing it in string with the other fresh herbs and removing after, say, 30 minutes (that time is off the cuff).

Foor a weird recipe, the cook book based on the Al Forno's restaurant in Providence (Cucina Simpatica) has a recipe for strawberry and basil ice cream. I haven't tried it, but their deserts are typically excellent.

Barbecue Margarita Pizza

Tomato and Basil Soup
2 tbsp butter
8 cups tomatoes
1 cup onions, finely chopped
1 cup white leeks, medium dice
1 bunch basil
16 cups vegetable stock

1. In a large pot sweat the butter, onions and leeks.
2. Add the tomatoes, basil and vegetable stock. Simmer until vegetables are cooked through, approximately 45 minutes.
3. Remove from heat and puree in a blender.
4. Return the pot to heat and bring back to a boil.
5. Season with salt and pepper, and then serve.

Recipe makes approximately 20 cups.

I make tomato and basil sause from scratch and cook it in a crock pot. The bitterness is usually from the acid in the tomatoes. A dash of sugar will take away the bitterness.
