Fish
Fish is one of the hardest meals/food to prepare. If you don't cook it, literally, PERFECT, it becomes too dry (if over cooked, even a little bit) or it comes out under-cooked (when not cooked long enough).
Then, trying to flip it without breaking it can get even more tricky.
It's the hardest thing to make in my kitchen.

I've heard souffles and tamales are hard. Souffles break, and real tamales take two days! I haven't gotten up the nerve to try either yet.
Any holiday or special event is a little stressful for me not because of the cooking, just because of the planning and timing and pairings to make sure everything is just right by the time guests arrive.
Otherwise, it would have to be enchilada night at our house. I make absolutely everything from scratch from the tortillas to the filling to the sauce. It takes all day and dirties so many dishes.

The one you have to prepare while you don't want to. I sometimes prepare meals for 20 guests willingly, it feels easy because I am happy to do it. On the other hand it can be for two and I feel tired if it is not my wish.

Christmas dinner.....I'm vegetarian and it icks me out to prepare the dead bird. I now buy the butterball turkey breast. No guts or bones to deal with.
