BUTTERNUT SQUASH PIZZA
1 small butternut squash
1 1/2 tsp nutmeg
1 tbsp olive oil
2 medium yellow onions, thinly sliced
3/4 cup grated lowfat Romano
1 1/2 cups grated lowfat fontina
1/4 cup chopped fresh parsley
Grilled Pizza Crust
Cut squash in half lengthwise and remove seeds. Prick rind with a fork. Place cut side down in a baking dish and add 1/4 inch water. Microwave squash on high 10 minutes, checking for doneness. (To bake: Preheat oven to 350°F. Place cut side down on a baking sheet. Bake until soft, about 1 hour.) Remove and cool.
Scoop out flesh and place in a medium-sized bowl. Mix with salt, pepper, and nutmeg. Heat oil in a medium-sized pot over medium heat and sauté onions until light brown. Remove from heat and cool. Season with salt. In a separate bowl, mix cheeses.
Make crust. While second side of each crust is grilling, spread 1/8 cheese mixture over cooked side of each crust and top with onions. Top with dollops of squash; sprinkle with parsley. Rotate 3 to 4 minutes until bottom is golden brown.

Beef stew was surprising good. Cooked zuchinni in the sauce was too. I've been thinking about trying a Reuben pizza or trying to make a cabbage/chilisauce/hotdog pizza, sort of a classic Polish boy flavor. Don't know why, other than being on a cole slaw kick lately.

i don't eat meat either, so things that i have tried and love are:
extra cheese and green chile (red also is fantastic, but chopped green chile is awesome)
pineapple and a bit of teriyaki sauce mixed with a little bit of sugar
zucchini, red and yellow bell peppers, and black olives (added after baking, unless you liked the baked olives)
mushrooms, pimentos, and marinara sauce as the pizza sauce
dessert pizza? sure! make a small crust, use a swiss (i like emmantaler), gruyere, or havarti, some green apples sliced and sprinkled with a bit of cinnamon. cheese and apples are worth a try!

I love hot dogs on pizza. You could use tofu dogs.
Also, you can experiment with sauces - instead of tomato, use alfredo or ranch, or bbq sauce with cheddar cheese.
You could do an asian pizza - sweet and sour sauce topped with cabbage, bok choi, shitake mushrooms, etc., and chinese noodles.
Alfredo with mozzerella, minced garlic and artichoke hearts sounds awesome too.
Spinach and eggplant are also good on pizza. You can also get ideas from California Pizza Kitchen: http://www.cpk.com/menu/pizzas.aspx
I haven't tried their pear and gorgonzola pizza but I hear good things about it!

pineapple on pizza is really good.
Also, figs soaked in wine, and then put on a pizza is pretty good.
Spinach and olives on a pizza is delicious.
I've had grilled tofu on pizza and I thought that was pretty good.
You could put up a Boca Burger and put that on the pizza.
Onions and tomatos on a pizza is excellent.
