Okay so I am trying to make a kind of version of petit fours and I am having trouble frosting the raw sides of the cakes.

I just made one big cake and cut them into squares so the edges are reshly cut and I am using buttercream frosting but when I try to frost the sides the cake just falls apart.

Is there anything I can put on the sides before I frost them so they wont fall apart?

Thin down some of the frosting. Frost the sides with the thinned down frosting. Let it set for a while. Then use the regular frosting, the first coat will hold it all together as long as you are gentle. It will also hold any crumbs in so they don't show.

Trust me, I am a cake decorator, this works like a charm.

If you have time, freeze the cake and then frost it. Be sure to wrap the cake well in several layers of cellophane wrap to prevent drying while in the freezer.

Wrap the cake real good in saran wrap and place it in the freezer for a couple hours or so, then frost it, that works nicely...

Good Luck to you... now ya got me in the mood to go bake something sweet... Thankie
