It's the water. Butter only has 15 % while Margarine has 30%. The tub margarine can have even more water.

Water - a lot of the soft, spreadable margarines on the market today have a really high water content. That's what substitutes for the fat.

Butter does have some water and milk solids but margarine has alot more water.
I never buy maragrine. It is awful stuff.

All recipes ask for butter or margarine. Except for one being from milk and other from veggies, I don't know what could cause the shrivel.

I'm not really sure, never looked into it. I put red wine vinegar mixed with dry mustard, herbs & spices on my popcorn. (yup, I'm stone cold sober !! lol) It's awesome! Just don't use too much vinegar or the popcorn gets soggy, just a couple of shakes is all it takes.
