Low-fat Spicy/Sweet Tuna Salad.
This spicy/sweet salad recipe is great served in a sandwich, with crackers, on a bed of lettuce, or on cold boiled pasta. What differentiates it from other comparable salads is the addition of shallots, pecans, and dried cranberries. Fat-free yogurt is substituted for much of the mayonnaise. You may also substitute cooked chunk chicken for the tuna.
Makes 4-6 servings
Ingredients:
18 oz. Canned chunk light or Albacore tuna
(or - 18 0z. cooked chicken chunks)
1 Tbsp. Mayonnaise
4 Tbsp. Fat-free, unflavored yogurt
1 small to medium shallot, minced
1/4 cup minced pecans
2 Tbsp. Sweet dried cranberries (optional)
1/4 tsp. Curry powder
Dash Cayenne pepper
Salt & Black pepper to taste
In a medium bowl, combine mayonnaise and yogurt thoroughly, until the mixture is homogeneous. Season with salt, pepper, cayenne, and curry powder. Add cranberries, minced shallots, and pecans, stir until combined. Drain the tuna/chicken if it’s canned. Add to the dressing and mix until the dressing coats the meat evenly.
Serve in a sandwich, on a bed of lettuce, with crackers, or over cold boiled pasta.
Low Fat Tuna Salad Sandwich
INGREDIENTS:
1 7-ounce vacuum-packed chunk light tuna
1/2 cup pre-shredded coleslaw mix
1/4 cup finely chopped onion
1/3 cup fat-free mayonnaise
1 tsp cider vinegar
Freshly ground black pepper
Romaine lettuce leaves and sliced tomatoes for garnish
8 slices whole grain bread, toasted
PREPARATION:
Combine tuna, coleslaw mix, onion, mayonnaise and cider vinegar in a medium bowl. Sprinkle with freshly ground black pepper. Line one side of toasted bread with romaine. Top with tuna salad, garnish with tomato slices, then add other slice of bread lined with another leaf of romaine.
Makes 4 sandwiches.

You have to be careful how much tuna you eat. It contains mercury, which causes neurological damage over time. You can look online to find out what is a safe amount of tuna to eat (for me, it's one can every three days). That's far more important than the amount of mayo you will be putting in to your meal.
I don't like seafood, but I do like tuna with mayo, diced olives, and shredded cheese on crackers. Drain the tuna juice first, of course. Also, get the kind that's in water. It's less fishy-tasting.

i have found it is worth buying the more expensive type of canned tuna and salmon.
Yes it is about 1 or 2 dollars more..but you should at least enjoy what you are eating. I find the store name brands and the cheaper brands taste horrible. No matter what goes in it.
Try a good brand..go for the white tuna..and you will see you can add just abit of mayo to make it as you like. Or mix whole may with no fat mayo, to get the creamy consistity to your sandwich. Also..salt and pepper is a must.

Light tuna has less mercury than white albacore. I eat both.
I make tuna 3 main ways
Mix tuna, some italian dressing, onion, celery, tomato and garbonzo beans serve over a bed of lettuce served with saltines.
Mix with pasta, light mayo and Mrs. Dash Garlic and Herb blend
Mix with pasta, homemade cheese sauce (which can be made with low fat cheese and skim milk) and a can of peas, top with italian bread crumbs and bake.

Chopped celery, cracked pepper, tomatoes, chopped cucumbers, instead of mayo, squeeze lemon juice.
Also, I always use chunk light tuna in a salad. Just grab a bag of those prepared salads (my fav is the veggie lovers) add the tuna and your favorite low fat dressing.

If you do the math, chunk light tuna is not cheap unless it is on sale. Add some sweet pickles and apples and onion. Really, Miracle Whip light is not bad at all.

What I do is this.... drain the tuna very well, flake it up really nice in a bowl, then I dice up onion & celery and mix it in and add about 1/2 tsp *teaspoon* of olive oil and some Mrs Dash seasoning .... yummie good, place it on a nice bed of shredded lettuce, you can also put it in pocket bread... sometimes when my hubby makes it he adds a few drops of real lemon also..

If you don't want to lay on the heavy condiments like mayo then try putting some lemon pepper and a dash of salt in it. It adds flavor, but not calories.
My mother in law has even mixed tuna with philadelphia cream cheese and put it on wheat bread (she used to cater). It was absolutely delicious! Get some light cream cheese and wha-lah.
My children will even eat it plain like that...no bread or anything.
