my son is a very picky eater, he doesn't like ground beef, my hubby doesn't like anything with green peppers, I need to work on this more, I'd asked my son if he'd eat ground turkey instead, he said he'd try it, does anyone have any good recipe's using ground turkey?

You can use ground turkey in ANY ground beef recipe. The texture is a little different, but it can be replaced pound for pound.

By the way, how old is your son? Be sure not to bend to his requests for every meal or you will feel like a waitress and short order cook. My son is also picky, but he knows he has to eat at least a little of the main dish and all of the rest of the meal (sides and veggies) before he can be declared "finished". If you fix something he doesn't like, just give him a small amount (two or three tablespoons) and make sure he does like the rest of it. Don't allow any sweets unless he finishes his dinner, either. Mozzarella Stuffed Turkey Loaf

1 1/4 pounds ground turkey breast
1 10-oz pkg frozen chopped spinach, thawed, squeezed dry
1/2 cup minced onion
1/2 cup seasoned bread crumbs
1/4 cup chopped fresh parsley
1 teaspoon dried oregano
2 egg whites
salt and ground black pepper, to taste
1/4 teaspoon cayenne pepper
4 ounces fresh mozzarella, cubed
2 tablespoons ketchup
2 tablespoons Dijon mustard

Preheat oven to 375°

In a large bowl, combine turkey, spinach, onion, bread crumbs, parsley, oregano, egg whites, salt and peppers. Mix until combined and divide in half.

Press 1/2 of the turkey into an 8-inch loaf pan covered in foil. Top bottom half with cubed mozzarella cheese. Press the rest of the turkey mixture over top and press down to flatten the top.

In a small bowl, combine the ketchup and mustard and with a pastry brush, brush the top of the meatloaf. Bake about 1 hour, until top is golden and the loaf begins to pull away from sides of pan. Let stand 10 minutes before slicing.

ANYTHING that uses ground beef can be substituted with ground turkey. It's a healthier option anyway!

I HATE peppers, do if I find a recipe that uses them I just skip them.

1) Spaghetti
2) Meatloaf
3) "Taco Street" Caserolle -- meat, refried beans, taco seasoning and taco sauce layed like lasagna with crushed tortilla chips
4) Lasagna

Do they eat other meat?

3) Pork chops
4) Chicken and anything--rice, stuffing, etc
5) Roasted turkey/chicken

My advice is to get a cookbook and just have fun! If you don't want something in there, experiment with different tastes. Good luck!

I've had good success using groung turkey anywhere it calls for ground beef. Meatballs, lasagna, casseroles. Be careful, though because if it's the texture he doesn't like, he won't like ground turkey either.

You can use ground turkey just like ground beef. It may require a little more seasoning and there is little to no fat. Try starting with a little olive oil, and sauteeing some onions and garlic. Then add the turkey. You can go anywhere from there.

It's pretty good and cheaper.

You can use ground turkey just about anywhere you would use beef. (I like turkey burgers). Try this one

Turkey Stroganoff
1 lb ground turkey
1 onion
1 can cream of mushroom soup
1 cup sour cream
1 pkg egg noodles

Cook noodles
Saute onion in butter, add turkey. When cooked add the mushroom soup and sour cream. Put on top of noodles.

anything that you make with ground beef can b made with ground turkey. there are other meats... pork chops, steak, liver, chicken, fish, all types of seafood. when you are standing in line at the grocery store look a the little cookbooks and see if there is anything appealing on the cover...flip through it. You might just need different variations of food....ie: I will eat green peppers fresh but will not eat them cooked, i don't eat potato salad but i will eat macoroni salad. gd luk

You can make ground turkey meatballs. Make them like regular meatballs and use a spaghetti type sauce. My mom makes them with egg, milk, swedish meatball spice mix, and then cooks them in a pan with a little bit of oil. Boil some water and cook any kind of pasta and heat up some spaghetti sauce. Chili, omit green peppers, use regular spagetti sauce as the base (so it will have a familar taste), and use ground turkey.

Turkey burgers are great with a little bit of sausage mixed in (like Bob evans mild), kids love burgers.
