you will have a hard time finding an authentic recipe. are real recipe has around 25 items. including cinnamon, clove, allspice,nutmeg,3-4types of dried chiles. whole chicken. just look around the internet and take different parts from all the recipe until you have made a recipe worth trying. and dont be shocked if the first batch you make isnt as good as you expect. it take trial and error to creat a recipe that you are happy with. and the rojo stuff in the jar is pretty good. you can use it a base to compare your mole to. but yours will still be better

Well its work making mole from scratch. I'm half Mexican and my Dad uses LA Preferedia brand Mole Paste (Rojo). It comes in a little glass, which btw you can use as orange juice glasses for future use.
Chicken Mole Enchalidas
After cooking your chicken the way you prefer you can pour the mole and blend together. To intensify the mole flavor dip your tortillas (corn) in the mole as well, fill in with the mole chicken and roll tortilla. Sprinkle with Chihuahua cheese ( or mozarella) and bake at 350-400 degrees for about 15-20 minutes.
Top with sour cream, tomatoes, shredded lettuce and cilantro to serve.

4 oz. onion, chopped
1 clove garlic, minced
1-1/2 tbsp. oil or butter
1/2 cup tomato sauce
1-1/2 oz. raisins
2-1/2 oz. smooth peanut butter
2 tsp. sugar
1 tsp. chili powder, or to taste
1/4 tsp. cinnamon
1/8 tsp. ground cloves
1/2 oz. unsweetened chocolate
1-1/4 cups weak chicken broth
Directions:
Sauté onion and garlic in oil or butter until tender but not brown. Combine this with remaining ingredients in a blender or food processor and blend until smooth. Return to saucepan and simmer 15-20 minutes, stirring frequently.
Roast some chicken or duck according to your favorite recipe. Brush the sauce over the bird at serving time; optionally sprinkle with chopped peanuts.

Super Chicken Mole
INGREDIENTS
2 tablespoons vegetable oil
2 onions, finely chopped
1 pound tomatoes, chopped
2 tablespoons chopped fresh parsley
2 hot chile peppers, minced
1 tablespoon finely chopped fresh cilantro
ground black pepper to taste
1/2 teaspoon white sugar
3 skinless, boneless chicken breast halves
1/4 cup chopped fresh oregano
1/2 teaspoon ground cinnamon
1 teaspoon ground cumin
1 bay leaf
2 (1 ounce) squares unsweetened chocolate, grated
1/2 lime, juiced
1 bunch chopped cilantro
DIRECTIONS
Heat the oil in a large deep skillet over medium heat. Add onions, and cook for a few minutes, then stir in tomatoes, and cook until they release all of their juice. Stir in the hot chile peppers, cilantro, black pepper and sugar. Bring to a boil, and let it cook for about 10 minutes to thicken.
Add chicken breasts to the skillet, along with the oregano, cinnamon, cumin, bay leaf, chocolate and lime juice. Simmer over medium heat for 15 to 20 minutes or until chicken breasts are cooked through. Chicken breasts should have an internal temperature of 170 degrees F (75 degrees C) when fully cooked. Remove bay leaf, and serve chicken breasts smothered in sauce. Garnish with additional fresh parsley or cilantro.
