Banana Cupcakes
1/3 cup shortening
1 teaspoon vanilla
2/3 cup sugar
1 egg
1 1/3 cups sifted flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon nutmeg
dash ground cloves
3/4 cup mashed banana
Cream shortening and vanilla; beat in sugar until mixture is light. Add egg and beat well. Sift dry ingredients together twice; add to the creamed mixture, beating on low speed until blended. Stir in banana and blend well. Fill greased cupcake pans or paper liners about half full. Bake at 375° for 20 minutes, or until cupcakes spring back when lightly touched in center. Makes about 12 cupcakes.

Valentine's Day Dessert
INGREDIENTS
1 (18 ounce) package refrigerated sugar cookie dough
1 (8 ounce) package cream cheese
1 cup confectioners' sugar
1 (21 ounce) can cherry pie filling
1 (8 ounce) container frozen whipped topping, thawed
1)Preheat oven to 350 degrees F (175 degrees C).
2)Roll the cookie dough to 1/4 inch thick and form it into a heart shape. Place the heart shape on a cookie sheet.
3)Bake at 350 degrees F (175 degrees C) for 10 minutes, or until the cookie is lightly brown on the edges.
4)In a large mixing bowl, mix cream cheese with confectioner's sugar. Spread the mixture on cooled cookie dough. Cover with cherry pie filling and whipped cream.

Apple Cinnamon Streusel Muffin- makes 24 muffins- courtsey of Kraft.ca
1 ½ (375mL) cup All purpose flour
¾ (175mL) granulated white sugar
1Tbsp (15mL) baking powder
1 tsp (5mL) salt
¾ (175mL) cup butter or margarine
1 ½ (375mL) cup tart apples diced (2 medium apples, cored and diced)
2 cups (500mL) Post Bran flakes cereal (any bran cereal can be replaced)
3 tsp (15mL) cinnamon powder
2 eggs
1 cup (250mL) milk (higher fat milks bake out better product)
¼ cup (50mL) chopped walnuts (for topping)
2 Tbsp (30mL) granulated sugar (for topping)
1. Sift flour, sugar, baking powder and salt. Cut in butter so that the mixture is crumbly looking. Reserve ½ cup of crumbs
for topping
2. Add apple, cereal and 1 ½ tsp of cinnamon to the crumb mixture
3. Combine eggs and milk, add to mixture after beating together to form a lumpy mixture. Fill muffin tins to ¾ full (line
with cupcake liners)
4. Blend reserved crumb mixture with remaining cinnamon, walnuits and the 2 Tbsp (30mL) of sugar, sprinkle over batter in
each cup
5. Bake at preheated 400 degrees Fahrenheit or 200 degrees Celsius for 15-20minutes
6. Cool for 10min before serving, or cool completely before plastic wrapping and freezing for up to 3 months.

Truffle Heart Cookie for Valentine's Day or Mothers Day
Cookie Dough:
Mix and whip together:
Butter 1LB
Sugar 1LB
Honey 1.33 LB
Add to buttermix:
Eggs 3 pc's
Mix together and add to butter mix:
Unbleached flour 2.25 LB
Salt 1/2 tsp
Baking Soda 1 Tablespoon
Dough yields 3.33 LBS
Do NOT overmix once flour has been added, just mix slightly, cool in fridge, then roll out about 1" thick and use a heart cookie cutter to create cookies. bake at 350. Chill before filling with truffle cream.
truffle cream filling (canache)
2 parts swiss chocolate
1 part whip cream
Heat whipcream and pour on to finely chopped chocolate, stir immediately, let chill until firm and then fill cookies making a sandwich.
Valentine's Day Cupcakes

One of the easiest treats to dress up for holidays and
birthdays is the cupcake. All you need is food coloring, cake decorator gel and frosting, and a little imagination.
You will need:
your favorite box cake, any flavor
red food coloring
white buttercream icing (follow link for recipe)
red, pink and green decorator gel
red, pink and white decorator frosting
flower decorating tip
red & white sprinkles cupcake liners
Instructions:
Prepare cake mix as directed. If desired, you can make pink cupcakes with either a flavored mix, such as cherry, or add a few drops of red food coloring to a prepared white cake mix. Put cupcake liners into muffin tins and fill liners as directed on box cake mix. Bake as directed and allow to cool thoroughly before frosting and decorating.
Prepare the white icing by following the recipe. When finished, separate into two dishes. Add a few drops of red food coloring to one bowl and stir until thoroughly mixed. You should have one bowl of pink icing and one bowl of white.
Decorate
There's really not much to decorating cupcakes, especially in the eyes of your admiring children. Just a dollop of frosting is artistic enough for them! Here are a few simple tips that will help you decorate your holiday cupcakes.
Piping - Using the flower tip on the decorator frosting, pipe a border around the frosted cupcake. Use contrasting colors -- red piping on white frosting, white piping on pink, etc.
Sprinkles - The beauty of sprinkles is that there is no perfection involved. SImply drop them and let them ly where they fall. Use contrasting colors, and mix colors when pleasing.
Shapes - Use the decorator gels to "draw" on heart shapes or to add flowers and leaves to a cupcake. You can also use these to dot around the outside edge of one of the treats. These are also ideal for writing words, such as "love", "be mine" and "kiss".
Frosting only - Use the two different colored frostings to decorate one cupcake. Spread half of a cupcake with white, and carefully spread the other half with pink. You can also spread a full coat of white on and dot the center with pink. Get creative and try swirls or other shapes by using only frosting.
Be sure to store your cupcakes in a tightly covered container so they do not harden or go stale. That is, if they last that long!
Heart Shaped Cupcakes
If you're looking for a special treat to serve on Valentine's Day, try this recipe.
INGREDIENTS:
Cake Mix
Frosting
Cinnamon Hearts
Foil
Cupcake pan
Paper cupcake cups
PREPARATION:
Make your cupcake batter according to the directions on the box and pour into cupcake cups in the cupcake pan. Roll pieces of foil into a ball about the size of a marble. Place one foil ball on the side of each cupcake, between the pan and the paper cupcake cup.
This makes the heart shape as the cupcake cooks. Frost and decorate with cinnamon hearts.

.bake your cake mix in a ice cream cone cup ( the ones that are flat at the bottom) fill it half way in the cones, bake in the oven .
once it cools you put the frosting on it , it looks just like real ice cream cones. you can put the little red hearts on them to decorate it.
