Drain and mash. Mix in 1/4 cup brown sugar and 1/4 stick margarine. Take large marshmallows and with your hands, wrap sweet potato mixture around marshmallows making them into balls. Roll in crushed cornflakes and place in a glass baking dish that has been sprayed with cooking spray. Push a marshmallow into the spaces between the sweet potato balls. Bake uncovered @ 350 until hot and marshmallows are melted.

Make a brown sugar glaze with 1/2 cup brown sugar and 1/2 cup butter. Heat in a saucepan until bubbly. Drain the sweet potatoes and pour them in. Fold lightly to cover. Then you can either bring them to a high simmer to heat through, or pour into a baking dish, cover with marshmallows, and bake in a 350* oven till browned, 10-15 minutes, I think. YUM!!!

Sweet potato pie. This recipe is fantastic. It's very similar to my grandma's but it's actually Emeril's... We use just a plain pie crust instead of the pecan one it calls for... We also leave out the mint and chocolate syrup... but it's all up to you and what you like.

1 uncooked pecan pie shell (plain pie crust with ground pecans folded in)
2 cups mashed sweet potatoes
1 cup sugar
2 tablespoons Steen's 100 percent Pure Cane Syrup
1 tablespoon ground cinnamon
1 tablespoon vanilla
6 eggs
1 cup heavy cream
2 tablespoons flour
Fresh sprigs of mint
Whipped cream in pastry bag
1 cup chocolate sauce in squeeze bottle
Powdered sugar

Preheat the oven to 375 degrees F. In a mixing bowl, whisk the mashed sweet potatoes, sugar, cane syrup, cinnamon and vanilla together. Whisk in the eggs, one at a time. Whisk in the cream and flour. Pour the filling into the shell. Bake for about 45 minutes or until the pie is set. Place a piece of the pie in the center of the plate. Garnish with pie with mint, whipped cream, chocolate sauce and powdered sugar.

BROWN SUGAR-GLAZED SWEET POTATOES WITH MARSHMALLOWS

A Thanksgiving classic with a nineties twist. There are marshmallows and brown sugar to keep the youngsters happy, and "big kids" will like the addition of almonds and spices.
4 pounds red-skinned sweet potatoes (yams), peeled, cut into 1-inch pieces
2/3 cup packed golden brown sugar
5 tablespoons butter
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
Pinch of ground ginger
2 cups miniature marshmallows
1/2 cup sliced almonds

Preheat oven to 375°F. Arrange potatoes in 13 x 9 x 2-inch glass baking dish. Combine sugar, butter, cinnamon, salt, nutmeg and ginger in heavy small saucepan over medium heat. Bring to boil, stirring until sugar dissolves. Pour over potatoes; toss to coat. Cover dish tightly with foil.
Bake potatoes 50 minutes. Uncover; bake until potatoes are tender and syrup thickens slightly, basting occasionally, about 20 minutes. Increase oven temperature to 500°F. Top potatoes with marshmallows and nuts. Return to oven; bake until marshmallows begin to melt and nuts begin to brown, about 3 minutes.

Serves 8.

Or just open the can.pour in casserol dish,sprinkle with brown sugar ,butter and fill with minature marshmallows,cover and bake for about 30 minutes at 325 degrees

sweet potato soup: one can sweet potatoes, drained of juices and pureed, 1 cup chicken broth, 1 cup heavy cream salt', 1 teaspoon ground cloves , 1 teaspoon garlic powder, 1/2teaspoon lemon pepper ,salt and pepper to taste put all ingredients in a sauce pan over med heat until all is warm , serve, warm not too hot , with buttered bread sticks and garnish the soup with freshly grated Parmesan cheese, this is an excellent winter soup!re

I like them mashed with butter, a little brown sugar and with any meal or all by themselves. You can put marshmallows on top and bake in oven until melted and a little brown. I just think that's too much sweet for me though.

add some pineapple chunks, top with marshmallows bake in oven for about 15 mim. at 250..........mmmmmmmmmm good
