Buy a loaf of really good crusty bread .. sourdough or ciabatta ...
Slice it thick, crush some garlic in a little olive oil .. brush the bread with it and toast it.
Then sautee some baby spinach with crushed garlic in a little olive oil until wilted. Season with salt and pepper lightly and set aside.
Season some thick slices of tomato with salt and pepper and grill or pan sear until they soften, but don't get mushy.
Do the same thing with some cleaned portabella mushrooms.
Poach an egg for each serving.
Place the mushrooms on the toast, top with the spinach, then the tomato .. place the poached egg on top .. top with some swiss cheese and place under the broiler until melted and bubbly.
You can make everything ahead of time and just assemble and broil before serving.

Frittatas.... fry up some hashbrowns, bacon, onions, brocolli, (whatever you like). Add in some cheese. Pour in some scrambled eggs and cook on the stove top, gently lifting the edges to allow some of the egg to flow underneath. After the bottom is cooked, tossthe pan into the oven under the broiler, to cook the top of the egg dish. Cut it like a pie... bon appetite

Eggs Benedict. It's easier than you think. Making it is order helps keep it simple. First Hollandaise, 3 egg yolk and 2 T. lemon juice in sauce pan, whisk lightly, add cold(hard) stick butter, and stir the stick of butter until it melts over medium heat. Stay right with it and in less than 8 minutes it will be thick and just set off to side. While water is coming to soft boil, quickly warm, Canadien bacon, ham, or bacon in skillet. Drop egg in simmering water for 4-5 minutes, while english muffin is in toaster. Assemble muffin, meat of choice, poached egg and spoonful of hollandaise. Extra sauce can be stored in refrigerator and gently reheated in microwave next day. In the summer add a slice of perfect tomato to stack. So good. And a lot easier than everyone thinks.

Have you tried frying salmon mixed with sour cream and scrambled eggs?
I like to use butter, but my second choice for frying is olive oil. Sometimes I add a little chili powder, salt and pepper to taste.

i love cat in the hat take a piece of bread cut a big hole out of it, the put it in a pan, then crack and egg and put it in the hole when it gets cooked flip it over, hopefully w/o the yolk breaking... its kinda like french toast but better :)
