What does

" You are everything I never knew I always wanted. " mean? if someone could explain to me what exactly this means, it'd be greatly appreciated. =]

It means that they never knew what they truly wanted from a person until they met and got to know that specific person, and that person has all of those qualities.

It is simply a clever wording that twists the meaning a bit. It probably refers to someone who met someone he or she really liked, who is nothing like the kind of person he or she thought she would like, but it turns out that person is great.
