The Waldorf salad owes its name to the Waldorf Astoria Hotal in New York, where the recipe was first created. In this version, soft cheese made from skimmed milk keeps the dressing low in fat.
this salad will goes well with your nice & juicy steak.
~~~~~~~~ INGREDIENTS ~~~~~~~~
12oz /350g celery
3oz/75g shelled walnut halves
3 red apple
Juice of 1/2 lemon
2oz/50g sultanas
1 large lettuce heart
~~~~~~~~ DRESSING ~~~~~~~~
4 tbsp fromage frais
1 tbsp lemon
1 tbsp mayonnaise
1 tbsp walnut oil
Salt and white pepper
Mix all the dressing ingradients together and season to taste. Beat vigorously with fork until the mixture is thick and smooth. Leave to ane side.
Wash and trim the celery stalks and roughly chop them, reserving a few celery leaves for garnishing the salad. Roughly chop 2oz/50g of the walnut halves. Wash, quarter, core and roughly chop the apples, leaving the peel on.
Place the apple in a large bowl, pour over the lemon juice and mix thoroughly. Add the celery, walnuts and sultanas to the bowl. Taste and adjustthe seasoning, if necessary.
Line a shallow bowl with the lettuce leaves. Spoon the salad into the bowl, and carefully pour over the dressing. Garnish with the remaining walnut halves and celery leaves and serve immediately.
*** Fresh Papaya Chutney***
This freshly made relish is refreshingly different from sticky-sweet bottled chutney. It supplies about 110mg of vitamin C, more than any commercial chutney.
In a large bowl, combine 2 papayas (11/2 pounds total), peeled and cut into 1/2-inch chunks, 1 small red onion, cut into 1/4-inch dice, 1/4 cup lime juice, 2 tbsp of apricot jam, and 1/4 tsp of salt. Cover and refrigerate the fresh chutney until serving time.

I am not sure. I always eat steak with potatoes, but you don't want that answer. I would check at Emeril's website. He seems like a meat and potatoes kind of guy. I am sure you can find a nice alternative there.....good luck...Oh yeah, I am a woman, but I think the best thing to have with any steak is a nice cold beer. Cheers

Lots of items go good with a medium rare steak. I do prefer the Delmonico cut for a good mix of flavor and tenderness. Shrimp cocktail Spring mix or spinach salad Baked potato or twice baked potato or wild rice or French fries. Grilled mixed veggies or asparagus or whole kernel corn or broccoli florets.

Are mushrooms considered a veggie? I think its just fungus. lol If your going to have a big steak your sides should kind of be a little light, right? I like sauteing mushrooms in olive oil with a little bit of salt. When the mushrooms are nice and brown I like to squeeze the juice of one lemon over top. Yum. These mushrooms with a nice buttered roll would be delicious with a steak.

Crab legs/shrimp, potatoes..vegetables..sauce..
