WHEN I MAKE HOMEMADE MACARONI AND CHEESE I USE
THE BIG BLOCK OF VELVETA CHEESE, 2 CUPS
1 1/2 CUPS OF ELBOW MACARONI
1/4FINELY CHOPPED ONION
2 TBSP ALL PURPOSE FLOUR
1/2 TSP SALT AND DASH OF PEPPER
2 CUPS OF MILK
3 TBSP BUTTER OR MARGRINE
AND BACON BITS OR BROCOLI CUT UP SMALL. AND COOKED
COOK MACARONI AS DIRECTED. COOK ONION IN BUTTER TIL TENDER NOT BROWN. IN MED POT . ADD FLOUR , SALT, PEPPER, ADD MILK AT ONCE COOK AND STIR TIL THICKENS AND COOK AND STIR 1 TO 2 MINUTES, ADD CUBED CHEESE STIR TIL MELTED.
STIR MACARONI AND BACON BITS OR BROCLI INTO A 1 1/2 QUART CASSAROLE. SPRINKLE WITH ALITTLE BIT OF SALT. PRE HEAT OVEN TO 350 BAKE 30 TO 35 MINUTES, OR TIL HEATED THROUGHT, MAKES 6 SERVINGS.
ITS GOOD.
IT NEVER LAST A DAY IN MY HOUSE.

Cheddar
Baked Macaroni and Cheese
INGREDIENTS
1 (12 ounce) package macaroni
1 egg
2 cups milk
2 tablespoons butter, melted
2 1/2 cups shredded Cheddar cheese
salt and pepper to taste
DIRECTIONS
Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 2-quart baking dish.
In a large pot of salted water, lightly boil the macaroni for about 5 minutes until half-cooked.
Whisk the egg and milk together in a large cup. Add butter and cheese to the egg and milk. Stir well.
Place the lightly cooked macaroni in the prepared baking dish. Pour the egg and cheese liquid over the macaroni, sprinkle with salt and pepper, and stir well. Press the mixture evenly around the baking dish.
Bake uncovered, for 30 to 40 minutes, or until the top is brown.

Italian Mac n Cheese is fabulous.
Bring to Boil while whisking:
1 cup milk
1/2 stick butter
4 TBS flour
lower heat and simmer 4 minutes.
Stir in 16 oz cheese(2 bags italian shredded blend) and 1 cup cream or half n half
stir in 1 box cooked penne
pour evenly into casserole dish
crumble one stack ritz crackers over top
pour 1/2 stick melted butter over crackers
cook at 375 for 30 minutes
I blended 3 recipes to come up with this one and oooohhhh is it good.....

MAC N' CHEESE
pound uncooked elbow macaroni
1/2 cup low-fat or fat-free sour cream
12-ounce can evaporated skim milk
4 ounces grated sharp Cheddar (about 1/2 cup)
4 ounces grated Monterey Jack (about 1/2 cup)
2 tablespoons Dijon mustard
1/8 teaspoon ground nutmeg
1 to 2 drops hot sauce, optional
Ground black pepper and salt
1/4 cup plain dry bread crumbs
1/4 cup grated Parmesan
Cook pasta according to package directions. Drain and transfer to a large bowl. While pasta is still hot, stir in sour cream and set aside.
Scald milk by heating in a small saucepan over medium heat until tiny bubbles just appear around the edges.
Add Cheddar and Monterey cheeses, mustard, nutmeg, hot sauce, pepper and salt to scalded milk. Simmer until cheese melts, stirring constantly.
Fold cheese mixture into pasta and transfer mixture to a serving platter.
Combine bread crumbs and Parmesan in a skillet over medium heat. Toast 1 to 2 minutes, until golden brown. Sprinkle mixture over macaroni and cheese and serve.

2.5 lbs flour 1.5 lbs powderd milk 1.5 lbs. melted oleo 7.5 lbs american cheese 2 gal boling water this is a bulk recipe from lubys so youll have to cut it down in mixing bowl combine flour milk and oleo and 3/4 water and mix well add cheese and rest of water and mix this is the cheese base 40 lbs cooked large macaroni elbows mix cheese base and macaroni with 6 tablespoons salt and 2 tablespoons white pepper mix well place in a pan and cover with cheese and let cheese melt

Probably gonna get booed for this one, but Velvetta make the BEST creamiest, cheesiest homemade Mac& Cheese known to man!!
Oh recipe! Here ya go....
Depending on how many your feeding:
Creamette elbow noodles
Velvetta
Milk
Butter or I-can't-believe-it's-not-butter
Salt
Pepper
Boil noodles according to package. In seperate pan, melt Velvetta with butter, milk, salt & peppa! Drain noodles when done and pour in melted cheesy goodness. Stir together. Enjoy!!

I use chedder cheese, velveeta cheese, cheese soup, milk or cream, salt & pepper. It makes a very creamy & delicious mac & cheese.
