It is the big roasts that resemble a thick steak. I use them when making a pot roast. They are not a tender cut of meat and I feel that roasting them with vegetables for about 4 or 5 hours makes the meat so tender that it falls off the bone. It is a great highly underrated, flavorful and inexpensive cut of meat. I hope that I have been some help to you in this matter.
